Turtle Cheesecake Bars
Have you heard of turtle candies? They’re a scrumptious combination of pecans, caramel, and chocolate.
They’re called turtles because they are usually made in the shape of turtles. I recreated this iconic combination of flavors into simple cheesecake bars.
This is the perfect recipe to make for a party. You can slice them as small as you want and feed a bunch of people easily.
You have to bake it in a dish with water, so pay close attention to the recipe instructions. But the end result is a rich and creamy cheesecake recipe with the perfect texture.
Pumpkin Cheesecake Bars
This recipe reminds me a lot of my keto pumpkin pecan cheesecake. There are a few main differences (other than the shape of the slices).
The flavor of the crust is one of the biggest differences. In my original pumpkin pecan cheesecake, I flavored the crust with pumpkin pie spice.
This time I only used three ingredients – almond flour, melted butter, and brown sugar substitute.
Another big difference is that in the original cheesecake recipe, I added sugar-free caramel sauce to the filling and as a topping.
This time I didn’t want them as rich, so I only drizzled some of the sauce on top.

How To Store Cheesecake
Store the cheesecake bars in an airtight container in the refrigerator. It will stay fresh for about three days.
The sooner you eat it, the better the crust will taste. The crust will soak up the liquid from the filling as it sits in the fridge.
The cheesecake bars are freezer-friendly, too. Store it in a freezer-safe pie container and seal it completely with a lid and/or aluminum foil.
Keep it in the freezer for up to six months. Let them thaw naturally in the refrigerator.

Ingredients
Crust:
- Almond Flour
- Melted Butter
- Swerve Brown Sugar Substitute
Filling:
- Cream Cheese
- Pumpkin Puree
- Swerve Confectioner’s Sugar Substitute
- Vanilla
- Keto White Chocolate Chips
- Chopped Pecans
- Sugar-Free Caramel Sauce
Directions
Preheat the oven to 325 degrees. Add the ingredients for the crust to a mixing bowl, and blend until well combined.
Press the crust mixture into the bottom of a well greased 9×9 baking dish. Bake for 10 minutes, and allow to cool.
Blend together the cream cheese, confectioners sugar substitute, vanilla and pumpkin puree until smooth and creamy.
Fold in the white chocolate chips and pecans.
Spread the mixture into the baking dish over the crust.
Place the baking dish into a 9×13 dish, and fill the larger dish with water until it is an inch or two up the side of the smaller dish. Bake for 25 minutes.
Remove, and top with additional pecans and white chocolate chips for garnish once cooled a bit.
Chill for 2 hours before serving.
Drizzle with sugar free caramel sauce before serving.

- 3 tbsp Swerve Brown Sugar Substitute

- 16 ounces Cream Cheese softened
- 1/2 cup Pumpkin Puree
- 1/2 cup Swerve Confectioner's Sugar Substitute
- 1 tsp Vanilla
- 1/3 cup Keto White Chocolate Chips plus additional for topping
- 1/2 cup Chopped Pecans plus additional for topping
- 2 tbsp Sugar-Free Caramel Topping
