Ingredients

Salad

  • 1 cup Chopped Pecans
  • 1/2 cup Crumbled Blue Cheese
  • 1/2 cup Unsweetened Dried Cranberries
  • 6 cups Mixed Greens
  • 1 cup Chopped Purple Cabbage

Champagne Vinaigrette

  • 2 tbsp Champagne Vinegar
  • 4 tbsp Olive Oil
  • 1/2 tsp Dijon Mustard
  • 1/2 tsp Sugar-Free Honey
  • Salt and Pepper to taste

Instructions

  • Combine the mixing greens, purple cabbage, dried cranberries, blue cheese and pecans in a large salad bowl.
  • Whisk together the vinaigrette ingredients in a bowl until well combined.
  • Pour the vinaigrette over the salad, and toss to coat well before serving.
