What Is A Winter Salad
A winter salad is a side dish that uses ingredients that are found in a lot of winter recipes. My recipe does exactly that. It includes pecans, cranberries, and purple cabbage – all winter-themed ingredients.
But the best thing about this winter salad is the keto-friendly champagne vinaigrette! The combination of champagne vinegar, dijon mustard, and sugar-free honey is undeniably delicious.
In fact, save this recipe even if it’s just so you have the dressing recipe. It tastes good on any lettuce or cabbage-based salad that you make.
Winter Salad
There is a lot of room for culinary creativity in this tasty winter salad. Start with the lettuce. I used purple cabbage and mixed as the main ingredient. But you can mix in some baby spinach with chopped iceberg lettuce or some arugula. Or use just one of them alone.
To give it a crunchy texture, I used pecans and dried cranberries. Instead of cranberries, add fresh blueberries. And instead of pecans, you can use slivered almonds or some chopped walnuts.
If you need the salad to be dairy-free, use crumbled goat cheese instead of blue cheese. It has similar flavors and textures.
Bleu Cheese Pecan Chopped Salad
This salad has a distinct flavor that you’ll begin to crave. The tangy bleu cheese with the buttery pecans and tart cranberries all smothered in a sweet vinaigrette. It’s the best salad you’ll make!
If you want it to have a bit of spice, sprinkle in some red pepper flakes or add a few slice of jalapenos. Another easy way to add some spice is to use spicy brown mustard instead of Dijon and mix some Horseradish sauce with the mustard.
What To Eat With Salad
Soup is the perfect thing to eat with salad. This salad will taste the best with either keto broccoli cream soup or keto ham bone soup. Both are fantastic choices.
If you want to serve the salad for dinner, keep it simple and serve it with a steak or keto pan seared garlic rosemary pork chops. In fact, rosemary is another popular winter herb, so it will be perfect with the salad.
If you want a light lunch, then eat this salad with a bowl of Low-carb shepherds pie soup. It will also taste perfect with some Keto scalloped zucchini.
For dessert, make low-carb death by chocolate cheesecake bars or some keto peppermint mousse shooters.
How To Store Salad
Since this salad is made with lettuce and cabbage, store the salad separately from the dressing. Keep the salad ingredients in a different container than the champagne vinaigrette.
Mason jars are my favorite way to store salad dressing in the refrigerator. It will seal the dressing tightly and you can shake the dressing before using it.
