1/2Red Bell Pepperchopped
4Green OnionsChopped

1/2cupPeanuts(optional)
1/4cupFresh Cilantro
Peanut Dressing
1/2cupCreamy Natural Peanut Butter
2tbspSoy Sauce or coconut aminos
1tbspSesame Oil
2tbspRice Vinegar
1tbspLime Juice
1/2tspGarlic salt
1/2tspGround ginger
2tbspWater
Instructions
Place chicken in a large mixing bowl.
Add shredded carrots, bell pepper, onions, jalapeno and peanuts. Toss together.
In a separate bowl, whisk together ingredients for the Peanut Dressing.
Pour the dressing over the salad ingredients. Mix well.
Garnish with fresh cilantro and additional green onions, if desired.
Drizzle with sriracha sauce, if you’d like a little extra heat.
