- 3/4 cup Carrots shredded
- 1/2 Red Bell Pepper chopped
- 4 Green Onions Chopped
- 1 Jalapeno chopped
- 1/2 cup Peanuts (optional)
- 1/4 cup Fresh Cilantro
Peanut Dressing
- 1/2 cup Creamy Natural Peanut Butter
- 2 tbsp Soy Sauce or coconut aminos
- 1 tbsp Sesame Oil
- 2 tbsp Rice Vinegar
- 1 tbsp Lime Juice
- 1/2 tsp Garlic salt
- 1/2 tsp Ground ginger
- 2 tbsp Water
