This Low Carb Thai chicken salad recipe has a low-carb peanut dressing that you are going to love! It’s low-carb and slightly-spicy for a fun meal.

Calling all pad Thai fans! This salad is for you! If you really love the spicy peanut sauce from your favorite Thai restaurant, then you are going really love this Thai peanut salad. It tastes just like pad thai, but without all the carbs. 

Crunchy Thai Chicken Salad

Honestly, chicken salads are some of my favorite things to make for lunch. When you use canned chicken, they come together so quickly – and there are thousands of ways you can make them. 

Thai Chicken Salad

This Thai chicken salad is bursting with flavor. I added Sriracha because I love the heat – but if you prefer mild dishes, you can leave it out. The same goes for the jalapenos. The combination means every bite sets my mouth on fire and I love it. 

This is a crunchy salad from all the veggies I added.

Low-Carb Thai Peanut Salad

What makes this taste like Thai food is the peanut dressing. I kept the carbs low by using a little bit of a variety of vegetables. I love the variety of tastes and textures that they all have when you put them together. 

This Thia peanut salad might just become one of your favorite salads to make when you are on the ketogenic diet.

Another thing I really love about this salad is that there is no lettuce! Sometimes, I just get a little tired of eating lettuce. This is a fun way to enjoy eating raw veggies without it feeling like the same old thing again. 

Keto Thai Peanut Dressing 

Seriously, this peanut dressing is incredible. You can even use it as a marinade for chicken or pork. I used natural creamy peanut butter. For low-carb dieters, make sure you use the kind without any added sugars.

The combination of soy sauce, sesame oil, rice vinegar, and ginger is a classic Asian one. You can even leave out the peanut butter and use the rest of the ingredients together to make a beef marinade. 

How To Store Chicken and Veggie Salad 

This is the perfect recipe for meal prep too! Store everything together in an airtight container in the refrigerator. It will last about 3 days. Since you don’t have to reheat it, this Thai peanut salad is the perfect thing to make ahead for the week.

Low-Carb Veggies For Salad 

What are your favorite veggies to use in salad? Mix them in! I used shredded carrots, red bell pepper, and green onions. Use your favorite peppers.

Yellow and orange bell peppers tend to be sweeter. Mix in some shredded cabbage or even thinly-sliced cucumber for a little more crunch and for some extra heat drizzle with sriracha!

Peanut Dressing

Creamy Natural Peanut Butter
Soy Sauce
Sesame Oil
Rice Vinegar
Lime Juice
Garlic Salt
Ground Ginger
Water

Instructions:

Place chicken in a large mixing bowl.


Add shredded carrots, bell pepper, onions,. Jalapeño and peanuts. Toss together.

In a separate bowl;, whisk together ingredients for the peanut dressing.

Pour the dressing over the salad ingredients. Mix well.

Garnish with fresh cilantro and additional green onions, if desired.

Ingredients

Salad

  • 24 ounces Chicken shredded, grilled or canned
  • 3/4 cup Carrots shredded
  • 1/2 Red Bell Pepper chopped
  • 4 Green Onions Chopped
  • 1 Jalapeno chopped
  • 1/2 cup Peanuts (optional)
  • 1/4 cup Fresh Cilantro

Peanut Dressing

  • 1/2 cup Creamy Natural Peanut Butter
  • 2 tbsp Soy Sauce or coconut aminos
  • 1 tbsp Sesame Oil
  • 2 tbsp Rice Vinegar
  • 1 tbsp Lime Juice
  • 1/2 tsp Garlic salt
  • 1/2 tsp Ground ginger
  • 2 tbsp Water

Instructions

  1. Place chicken in a large mixing bowl.

  2. Add shredded carrots, bell pepper, onions, jalapeno and peanuts. Toss together.

  3. In a separate bowl, whisk together ingredients for the Peanut Dressing.

  4. Pour the dressing over the salad ingredients. Mix well.
