1/8cupRice Wine Vinegar

1tspSesame Oil

Instructions
Slice the cucumber into ½ inch pieces.
In a large bowl, combine cucumber and red onion.
In a small bowl, whisk together vinegar, water, sesame oil, salt, and lime juice. **If you would like a little sweetness to your salad dressing, add the swerve sugar substitute.
Add the dressing to your cucumbers/onions, along with fresh cilantro. Toss everything together.
Top with chopped peanuts, sesame seeds, and red pepper flakes if desired.
