Cucumbers are basically one of the best types of vegetables that you can eat on the keto diet. But let’s be honest, it’s effortless to get tired of them. That’s why it is so important to try new combinations and different salad dressings.
This Thai cucumber salad is refreshingly different! The red onion has a bold bite. When you layer it with the subtle rice vinegar, bright lime juice, and briny sesame oil, you have a boldly different salad that your tastebuds will enjoy!
Spicy Thai Cucumber Salad
This salad is not very spicy at all. In fact, it’s so mild that kids will enjoy it too. You can garnish it with red pepper flakes to give it a little kick. If you want it to taste spicier, I suggest drizzling some Sriracha on top. That will wake up your mouth!
Best Thai Cucumber Salad Recipe
When you go to make this salad, you can use any type of cucumber that you want. Personally, seedless English cucumbers are my favorite, but any type is just fine.
In fact, this is a wonderful way to use up any leftover garden cucumbers that you have.
If you are tired of eating sliced cucumbers, try to spiralize them! That’s a fun and different way to enjoy this salad, and it won’t even look like normal cucumbers.
Easy Cucumber Salad
Honestly, this salad is perfect by itself. Eat it as a quick lunch or even a snack. If you want it to be a really filling lunch or dinner, add some shredded rotisserie chicken. You could even serve it with a steak on the side.
Then, add some cauliflower rice, and you have a complete and filling meal.
Cucumber Onion Salad
If you want the salad to have as much flavor as possible, I suggest using red onions. They have a very bold aroma and flavor and will enhance the taste of the entire recipe.
If you are going to save this recipe for your meal plan later in the week, use white or yellow onions. Raw red onions will become even more pungent as they sit in your refrigerator. Store the salad in a mason jar with a lid that screws on nice and tight.
Then, add the dressing, and it will stay fresh for about 5 days.
The peanuts and cilantro are both optional. I love garnishing with peanuts because they give a fun crunch to it, kind of like croutons. You can leave them out, though.
Thai Salad Dressing
The Thai salad dressing is made with a combination of rice vinegar, water, sesame oil, salt, and lime juice. The sweetener is optional. Before you add any sugar substitute, I suggest tasting it first.
See if you think it needs any at all. Then, just add a really tiny bit of sweetener at a time until it tastes how you want it to.
It doesn’t take much sweetener to overpower the rest of the ingredients completely, so add it slowly.

Rice wine vinegar

INSTRUCTIONS:
Slice the cucumber into ½ inch pieces.
In a large bowl, combine cucumber and red onion.
