Ingredients

  • 1 cup Water
  • 2/3 cup Granulated Swerve Sugar Substitute
  • 1/2 cup Walnuts chopped
  • 1 pound Boneless Skinless Chicken Breasts cut into pieces
  • 2 tbsp Olive Oil
  • 2 tbsp Sugar-Free Honey
  • 1/4 cup Mayonnaise
  • 1 tbsp Heavy Whipping Cream
  • 1 tbsp Swerve Confectioner's Sugar Substitute
  • 1/4 cup Green Onions

Instructions

  • Combine water and ⅔ cup granulated Swerve in a pot over medium high heat. Bring to a boil.
  • Add walnuts to the boiling sugar water, and boil for 2-3 minutes. Remove, drain and dry well.
  • Place oil in a skillet over medium high heat on the stove. Season the chicken with salt and pepper to taste.
  • Saute chicken in the heated oil until chicken is cooked through.
  • While the chicken is cooking, combine the sugar free honey, mayonnaise, heavy whipping cream and confectioner sugar substitute in a bowl.
  • Pour the mixture over the chicken, and toss to coat well.
  • Mix in green onions, remove from the heat and serve, garnished with the candied walnuts.
