Walnuts are a fantastic type of nut to eat on the ketogenic diet. Not only are they a wonderful source of protein (4 grams of protein in 1 ounce of nuts), but they are wonderfully low in net carbs too. 1 oz of walnuts contains 1.98g of net carbs.
That means there are less than 2 grams of net carbs per ounce of walnuts.
That is why I used walnuts in my strawberry chocolate bark and as a high-protein ingredient in my easy keto fudge. I love the taste and texture of walnuts, and they are a wonderful choice when you bake or cook.
Keto Walnut Chicken
If you have ever seen honey walnut shrimp on the menu at Panda Express, then you are already familiar with the flavors of this iconic dish. I decided to try and use chopped chicken breast instead of shrimp and the result is pretty incredible!
This is a very sweet recipe. I used three different types of sweetener in it. If you aren’t a fan of sweet flavors, then you might want to use less granulated sugar substitute. The sugar-free honey and confectioner’s sugar substitute are important because they make the sauce thick and sticky, just like the recipe from Panda Express.
Walnut Chicken Stir Fry
To make this chicken, I chopped up a chicken breast. Remember to make sure that your chicken pieces are cut thinner so they cook quicker. Alternatively, you could also use chopped chicken thighs.
If you want to speed up the recipe a bunch, then toss the sauce over some shredded rotisserie chicken. This recipe is a fantastic choice for your weekly meal prep.
Store it in an airtight food storage container and keep it in the refrigerator for up to four days. Reheat this on the stovetop or in the microwave.

There are two brands of keto-friendly honey that I love the most. Nature’s Hollow and Wholesome Yum both make amazing keto-friendly honey substitutes. They have the same flavor as classic honey from bees but no net carbs.
Low-Carb Honey Chicken
Since this keto honey chicken recipe is so sweet, I suggest serving it with something savory (or a few savory dishes). Easy keto scallion pancakes have an earthy flavor that will cut your chicken’s sweetness down.
Keto bok choy stir fry and soy sauce eggs are a salty side dish that is the best thing to serve with this chicken. If you want some spice, then add some bang bang cauliflower to the side! They will light your taste buds on fire!

Ingredients:
Water
Granulated Swerve sugar substitute
Walnuts
Boneless skinless chicken breasts
Olive oil
Salt and pepper
Sugar free honey
Mayonnaise
Heavy whipping cream
Swerve confectioners sugar substitute
Green onions
Instructions:
Combine water and ⅔ cup granulated Swerve in pot over medium high heat. Bring to a boil.
Add walnuts to mixture, and boil for 2-3 minutes. Remove, drain and dry well.
Place oil in a skillet over medium high heat on the stove. Season the chicken with salt and pepper to taste.
Saute chicken in the heated oil until chicken is cooked through.
While the chicken is cooking, combine the sugar free honey, mayonnaise, heavy whipping cream and confectioner sugar substitute in a bowl.
Pour the mixture over the chicken, and toss to coat well.
Mix in green onions, remove from the heat and serve. Garnish with the candied walnuts.

- 2/3 cup Granulated Swerve Sugar Substitute
- 1/2 cup Walnuts chopped
- 1 pound Boneless Skinless Chicken Breasts cut into pieces
- 2 tbsp Olive Oil
- 2 tbsp Sugar-Free Honey
- 1/4 cup Mayonnaise
- 1 tbsp Heavy Whipping Cream
- 1 tbsp Swerve Confectioner's Sugar Substitute
- 1/4 cup Green Onions
Instructions
