~ Spicy Walnut Peach Salad
When I got pregnant with Olivia, I thought that a toddler and a newborn would be easy peasy, just like it was when I had Evan and William. The only difference between them is that I now work full time from home. She’s an easy going baby and we’re all on a nice schedule that, believe it or not, allows me to manage everything on my own and still enjoy my job, but honestly at first I was a little worried. The one thing that I struggled the most with after having Olivia was, and still is, making dinner. I just couldn’t get it together and I didn’t want to constantly be ordering takeout or ask my husband to cook every single day like he normally does. What I can make is my favorite Spicy Walnut Peach Salad!
Recently while food shopping at Publix, I came across Freschetta® and their delicious selection of quality ingredient pizzas that are located in the frozen section. I knew that I could pull this off so I snagged Freschetta® Roasted Mushrooms & Spinach Pizza.
I threw the pizza in the oven that night and gave it a homemade touch by adding my favorite spicy walnut peach salad (recipe below) on the side and I was done within 20 minutes! The pizza was DELICIOUS and went perfectly with my salad and, more importantly, everyone loved it! I know that I will definitely be stocking my fridge with some of their other yummy pizzas like some of the naturally risen and their new artisan crust during their promotion thats runs from 5/19-6/8, where you get 2 Freschetta® pizza for $10. Monday’s will now officially be pizza night at our house!
Ingredients for one bowl of salad:
Two cups of your favorite salad mix. **We used an organic blend, also located at Publix.
1//2 cup of feta cheese
1/2 cup of walnuts
1/2 a peach
How to:
Chop peaches into bite size chunks.
Place salad mix into bowl and top. with walnuts and feta cheese.
Pour salad dressing over the salad and then top with peaches.
Salad Dressing:
Mix 3 tablespoons of olive oil, add a half teaspoon of red pepper flakes, a teaspoon of lime juice, a pinch of salt and finish off with some freshly ground black pepper.
