With three types of deli meat and a zesty red wine vinaigrette, this keto Italian sub sandwich is the perfect replacement for a sandwich with bread.

Keto Italian Sub
Think of your favorite sub sandwich. All those layers of thinly-sliced meat, cheese, and crispy veggies, all topped with a tangy combination of vinegar and spices. I took all of those things and made a completely customizable Italian sub salad!

You could take all of the ingredients in this recipe and make a keto-friendly sub sandwich, too. Just layer the ingredients on sliced keto-friendly French bread and enjoy!
What types of meat are in an Italian sub? Most versions include pepperoni, salami, and ham. You might find some places add mortadella and capicola.
You can add those last two types of meat to your salad if you want. They are just as low in carbs as salami.
Italian Sub Salad
This Italian sub salad is super easy to customize. Start out with your favorite type of lettuce.

I used romaine, but you can use spinach an arugula. Then, change the meat and cheese.
I use pepper jack cheese cubes but you can use any type of cheese that you like! Browse the specialty cheese section and pick out some new ones to try.
Red onions tend to be very aromatic. If you want, you can leave the onion out but on the other hand, if you want to really add more spice, add some jalapeno slices. And the tomatoes are also optional.
They tend to be higher in carbs, so feel free to leave them out.
Italian Chopped Salad
My other favorite thing about this recipe is the tangy red wine vinaigrette. Save this recipe because you can use the dressing on any other salad that you make! It also tastes delicious as a dip for raw veggies.

It’s a really simple salad dressing. Just combine olive oil with red wine vinegar, Italian seasoning, and sweeten it with sugar-free honey.
If you don’t have sugar-free honey, then I suggest using a few drops of your favorite liquid sweetener.
What To Eat With Salad
What you eat with it depends on when you eat it. If this salad is a snack, then make some low-carb antipasto bites with it.

They also taste perfect with some tomato basil cream cheese pinwheels. If you’re going to serve this salad for dinner, then make low-carb cornish hens with it or air fryer alfredo chicken wings.
If you’re really hungry, then make a keto bread bowl with cream of chicken soup. It will fill you up!
And this salad also tastes delicious with keto French Onion soup. You’ll love how they taste together but the Italian sub salad is so filling that you can eat it by itself.
Salad Meal Prep
If you want to speed up the meal prep process, then pre-slice and dice all the veggies first and make the dressing. Store them separately.

Keep the salad dressing in a leak-proof container and keep it in the refrigerator for up to a week. Then, store the chopped veggies in a separate airtight container in the refrigerator for up to three days.
I don’t recommend storing the salad after you add the dressing to it because it will make the lettuce too soft.

Dressing:

Directions

Add the romaine lettuce to a large serving bowl. Layer the pepperoni, salami and ham on the top of the salad.

Place the cucumber, red onion, tomato and cheese cubes on the salad.

Layer some pepperoncini peppers on the salad.

In a bowl, whisk together the ingredients for the vinaigrette until well combined. Drizzle the dressing over the salad, and toss to coat well before serving.
