I’ve been sticking with Keto cycling (one day on and one day off) and I’m enjoying the variety it provides me! Despite what many may think, Keto cycling doesn’t mean you get to eat as many carbs as you want. The idea is to get a healthy amount of starches and carbs rather than the low percentage that Keto allows.
After a few weeks of giving it a go, I feel like carb cycling is more for those coming off Keto, or those looking to maintain rather than lose weight. It’s also a great way to have a healthy introduction to carbs, and it’s really easy to get the whole family eating this way if you choose!

All you need to make this warm quinoa salad is spinach, Success® Boil-in-Bag Quinoa, mushrooms, olive oil, fresh garlic, and red pepper flakes for some kick!
Warm Spinach & Mushroom Quinoa Salad
Ingredients:
1 pound of spinach
2 cups of Success® Boil-in-Bag Quinoa
2 pounds of mushrooms
1/4 cup of olive oil
1 tbsp fresh garlic
1/2 cup red wine vinegar
Salt & pepper to taste
1/2 tsp red pepper flakes
Instructions:
Make Success® Boil-in-Bag Quinoa according to instructions on the packaging and set aside.
In a bowl whisk vinegar, olive oil, salt, and pepper.
In a skillet add mushrooms and drizzle half the dressing, toss and cook until mushrooms are soft.
Turn down heat and top with spinach and quinoa.
Stir until spinach is slightly wilted. Add remaining dressing, stir and serve!
Top with red pepper flakes for a kick and enjoy!

tomatoes
