Tejano Style Shrimp Cocktail
There are so many recipes and drinks to celebrate Cinco de Mayo with but I always find myself gravitating towards simple and classic recipes that pack a tasty punch. This year we decided to stay away from the blackened fish tacos we usually make and instead go with a spicy avocado and shrimp cocktail that’s amazing! It can be served up in individual servings with crackers or in large quantities and poured over rice with a side of tostone. The secret is in the mouthwatering sauce that is pretty simple to make with three ingredients; ketchup, Valentina sauce (we used the black extra spicy one) and Clamato. Add a cold corona, some lime and you’re good to go! What do you plan on serving for Cinco de Mayo?
Tejano Style Shrimp Cocktail
Ingredients:
3 small fresh tomatoes
2 jalapenos
2 small cans of clamato **add more if you want it soupier
3 tablespoons of Valentina hot sauce
1/4 cup of fresh cilantro
3 small avocado
2 tablespoons of ketchup
1 small onion
2 limes
1 pound of cooked shrimp
Directions:
Chop and dice the three tomatoes, avocado, jalapeño, onion, and cilantro.
In a large bowl, combine shrimp, tomatoes, avocado, jalapeño, onion, and cilantro. Stir in clamato and ketchup. Squeeze desired amount of lime juice over mixture. Serve in individual cups with crackers or pour over rice. **This shrimp cocktail is chunky and will have a slightly soupy consistency.
