Keto Korean Cucumber Salad
Swerve confectioner’s sugar substitute is what keeps this salad keto-friendly. It sweetens the cucumbers without leaving any funky aftertaste. If you don’t have any, you can substitute with your favorite granular sweetener too.
Just make sure that the sweetener dissolves into the dressing or else your cucumbers will taste a bit grainy. I suggest using either mini cucumbers (like I did) or slicing an English cucumber.
Garden cucumbers can work too, but they tend to be a bit more bitter. They’re more suited for pickles and tangy vinegar dressings. Mini cucumbers are sweeter and the English cucumber has fewer seeds.
Spicy Cucumber Salad
Korean cucumber salad is also known for having a bit of kick to it. Sprinkling red pepper flakes on top is the easiest way to add some heat.
Follow my directions, taste the cucumbers, and then add more red pepper flakes if you want it to taste spicier. Some recipes sprinkle toasted sesame seeds on top of the cucumbers.
They will add a few more carbs, but the nuttiness that you’ll taste is phenomenal! It really does elevate the entire salad.
What To Eat With Cucumber Salad

How To Store Cucumber Salad
Store the spicy Korean cucumbers in an airtight container (like a mason jar with a lid) and keep it in the refrigerator for up to a week. As they sit in the fridge, the flavors will really soak into the cucumbers.
They taste even better the next day.
I suggest storing them without the green onions, though. They will soften and that texture just isn’t as pleasant.
