I don’t know if it’s all the ads or maybe I just have a really big sweet tooth, but I am always in the mood for ice cream. Cold, sweet, cream, melting in my mouth. It’s one of my favorite snacks!
One of my favorite flavors of all time is mint chocolate. (I’m looking at you, Andes mints!). This recipe tastes like candy. Go ahead, treat yourself!
Perfect Summer Keto Dessert
What is your favorite thing to eat in the summer? My family and I love ice cream! Like seriously, love it. Just like pumpkins belong in the fall, summertime is all about the ice cream.
This recipe is the perfect summer keto dessert. It’s actually healthy for you!
Wait. A healthy dessert?
Yup!
It’s full of calcium and protein and healthy fats.
One word of caution: it does use heavy whipping cream. If you are lactose intolerant, I recommend making a fruit sorbet instead.
Kid-Friendly Treat
My kids don’t eat keto all the time, but it’s amazing how often I make a low-carb food for myself and my kids ask if they can have some too!
This keto mint chocolate ice cream is really popular with my kids. I have to make a large batch so that there’s some for me leftover too.
Easy Keto No-Churn Ice Cream
Does no-churn ice cream taste creamy? Yes, my keto no church ice cream has a delightfully creamy texture – which is one of my favorite things about ice cream.
While you don’t have to churn it, if you want it to be even creamier, you can let it soften a bit and then either whip it up with an electric mixer or add a splash of heavy whipping cream and mix it together in a Magic Bullet or another small blender.
If you do the Magic Bullet blender idea, you’ll love it! It turns out even creamier – like soft serve!
How To Make It and Store It
This is so easy to make! After you make it once, you can begin replacing ingredients and making new varieties and flavors of ice cream.
The entire recipe is at the bottom of this post. Basically, you just simmer and boil a few of the ingredients and then you let it cool. Then, you mix in more cream and whip it until stiff peaks form. Fold in the chocolate chips and then freeze it!
Store it in the freezer (obviously) in an airtight container with a lid. It should stay delicious in the freezer for up to 3 months.
What’s In Keto Ice Cream?
Here’s what I used in my keto ice cream. To make different flavors, just replace the chocolate chips and peppermint extract with your own mix-ins.
- Heavy Whipping Cream
- Butter
- Sugar-free granular sweetener – Monkfruit Sweetener or Swerve work the best. You can also use liquid or powdered Stevia too.
- Peppermint extract – fresh peppermint doesn’t mix in very well, use the extract.
- Sugar-free chocolate chips

Ingredients
Whipping cream
Butter
Vanilla Extract
Granular sweetener (Monkfruit Sweetner or Swerve ) or Powdered Stevia sweetener
Pure Peppermint Extract
Stevia-sweetened semi-sweet chocolate
*Optional: 10 drops green food coloring
Directions
In a medium saucepan, add 2 cups heavy whipping cream, granular sweetener, and butter.
Simmer over medium heat, stirring until butter melts and sweetener dissolves.
Increase heat and bring to a boil, then lower heat and simmer for 30 minutes, stirring occasionally.
Pour into a glass storage container and let cool to room temperature.
Once cooled, add peppermint extract and mix. (*Optional: add food coloring)
In a medium mixing bowl, add the remaining 2 cups of cream and whip to stiff peaks.
Gently fold peppermint mixture into the whipped cream. *food coloring optional
Sprinkle shaved chocolate over the top and gently fold.
Freeze for 4 hours or overnight.*Please note that the longer you freeze, the longer you’ll need to thaw prior to serving. This will have a mousse-like texture the longer it thaws.
Heat an ice cream scoop using hot water and use to serve.
