Ice cream sandwiches are some of my favorite summertime treats. I love the cold ice cream in between the layers of crumbling cookies. It brings back so many memories for me, does it do that for you too?
Two Low-Carb Dessert Recipes In One
This recipe is for both the keto peanut butter cookies and then the no-churn low-carb ice cream. When you put them together, you have a summertime favorite!
Save this post because even if you aren’t in the mood for ice cream sandwiches, you can either make the cookies or the ice cream and eat them separately.

The base of these ice cream sandwiches is the best keto peanut butter cookies you have ever had! They are so easy to make that you can whip up a batch whenever you are craving something sweet.

Ingredients in Keto Peanut Butter Cookies
Here’s what I used in my low-carb cookies, along with any substitutes you can make.

- Peanut Butter – Use sugar-free natural peanut butter. You can substitute other nut butters like almond butter, cashew butter, or sunbutter instead. They all turn out the same.
- Almond Flour – Use only almond flour. Do not use almond meal. Almond meal isn’t ground as fine and will make your cookies taste grainy.
- Egg
- Swerve – Use either Swerve granular sugar or the brown sugar Swerve.
Dip Cookies in Chocolate
For a little extra fun, dip the cookies in melted sugar-free chocolate and let them cool. This will give them a little extra sweetness and tons of amazing flavor!
How To Make Keto Ice Cream
This is my favorite way to make low-carb ice cream. It’s a no-churn recipe that is so easy to make that you won’t want to go to the store and buy it pre-made ever again.
It’s also really easy to customize too. My recipe is a basic vanilla one. I’ll share my favorite ways to customize it – all of them are low-carb.
Ingredients In Keto Ice Cream
To keep my ice cream low in carbs and high in healthy fats, I used the following heart-healthy ingredients.
- Heavy Whipping Cream – If you are trying to eat dairy-free, you can replace it with full-fat coconut milk instead.
- Swerve Powdered Sugar – This works best because of the consistency of the powdered sugar.
Low-Carb Ice Cream Mix-In Ideas
If you want to make different flavors of ice cream but keep it low-carb, then try any of these ideas.
- Sugar-Free Chocolate – Mix in some sugar-free cocoa powder for some keto chocolate ice cream.
- Strawberries – Chop up some strawberries and mix them in your ice cream.
- Sugar-Free Chocolate Chips – Make some keto chocolate chip ice cream with some sugar-free chocolate chips.
- Peppermint Extract – Chocolate and peppermint go so well together. If you make chocolate ice cream, mix in some peppermint extract for a burst of flavor!
- Sugar-Free Caramel Sauce – Swirl in some sugar-free caramel sauce for a little extra sweetness. Sprinkle some sea salt on top to make a salted caramel flavor.

Keto Peanut Butter Cookies
Prep: 10 minutes
Cook: 10-15 minutes
Net: 12 cookies
Ingredients:

Peanut butter
Almond flour
Egg
Swerve granular sugar (you could also use the brown sugar Swerve)
Instructions
Preheat oven to 350 degrees and line a sheet pan with parchment paper.
Combine all ingredients in a bowl until mixed well.
Using a teaspoon-sized amount, roll 12 balls out of the batter and place on the parchment paper. Gently take a fork to press into the cookie dough both directions. Cookies will not grow in size much.
Bake for 10-15 minutes, and start checking them at the 10-minute mark.
When done, let cool.

Directions
- In a mixer, combine all three ingredients until stiff peaks form. Whipped cream should be thick and creamy.
To make ice cream sandwiches
In an open, freezer-safe dish, place whipped cream on the bottom portion of half your cookies and then place the top on. Freeze for 2-3 hours and enjoy.
