I don’t know about your kids, but my older kids don’t get out of bed until almost noon! I’m up at the crack of dawn with the babies and every day I hope they’ll let me sleep in and then I spend the rest of my day trying to get the older kids out of bed. It’s pure summer madness at our house! Growing up, my mom would swing open my door around 8:30 and scream “Levantate ya que son la neuve y en esta casa no viven vagos” (she ALWAYS exaggerated the time)! This would be followed by a hearty breakfast of homemade areas de maiz and un cafe con leche. My mornings are a lot more hectic than my moms were, so I don’t have the time to make arepas from scratch like she use to. But on the days I want to whip up a hearty breakfast I make a smoked sausage breakfast tortilla, and I always keep some delicious Eckrich Original Skinless Rope Smoked Sausage (we buy ours at Walmart) that’s been around for generations and everyone in the family loves!
It’s naturally hardwood smoked and that gives it that true smokehouse taste and makes my smoked sausage breakfast tortilla taste amazing! It’s perfect for busy summer mornings and nights. During the summer our schedules don’t always match up and dinners together aren’t always realistic, so I try to focus on having a late breakfast/lunch meals with the older kids and it has sort of became a summer tradition that we all enjoy. Smoked Sausage Breakfast Tortilla
Ingredients:
*Serves four
Eckrich Original Skinless Rope Smoked Sausage
4 eggs
2 tablespoons of olive oil
Red pepper
Green pepper
Small sweet onion
2 medium flour tortilla
Salsa verde
Avocado
Queso fresco
Instructions:
Dice up your smoked sausage, red pepper, green pepper and onion and sautéed in olive oil until soft. Set aside.
Beat eggs and mix in with sausage and cook until firm and then flip. When both sides are firm they’re ready to serve.
Brown tortilla in a frying pan. ** We used an iron skillet
Top one tortilla with eggs and then add your second tortilla.
Top with smoked sausage, salsa verde, avocado and queso fresco.
