Starting in August, there’s a birthday every single month (expect December) all the way up until March. This week we celebrated my oldest birthday a little early and instead of getting him what we normally do, which is apple pie and ice cream, we switched things up a little and made him some ice cream filled cupcakes (these ice cream cone cupcakes look like fun too). I figured since it’s still hot outside, adding his favorite Mayfield® Turtle Tracks ice cream to the cupcakes would be perfect! I’ve never made them before but I did have them at a friends party once and they looked pretty easy to make, so I gave it a go. This is a pretty big deal in our house because I rarely ever bake. I’m glad I made them because the kids loved them (see recipe below)!
We became big fans of Mayfield® ice cream when we first moved down to Florida. Their delicious selection of ice cream became an instant hit in our house and it still is to this day! I also love that they make their ice cream using fresh cream from their very own dairy with no growth hormones. Ice Cream Filled Cupcakes
Ingredients:
1 box of milk chocolate cake mix
3 eggs
Oil
Mayfield® Turtle Tracks ice cream
Icing
Sprinkles
Knife **any size will work but smalls ones are easier to control
Instructions:
Make your cupcakes according to instructions on the box.
Cut a circle into cupcake, remove and hollow out the center of cupcake.
Fill cupcake with ice cream.
Put the cupcake tops back and refrigerate until ready to serve.
When you’re ready to serve, apply icing and sprinkles.
It’s pretty easy to make and the kids can even help make them!

Love this idea. Rather than making a huge ice cream cake. Get some bite size ones. Need to look out for this ice cream
