Filled with four different types of berries, this very berry cheesecake salad has 7 grams net carbs in each serving.
Keto Cheesecake Salad
What is cheesecake salad? It’s a sweet side dish that includes cream cheese and some kind of mix-in (like fruit). My favorite cheesecake salad was my keto red white and blue salad, with strawberries and blueberries.
It tastes so good that I wanted to change it up and use some different types of berries. Since I wanted to use a variety of different berries, I changed the base of the salad, too.
Instead of just making it with cream cheese, I thinned it out a bit by mixing in some heavy whipping cream and Swerve confectioner’s sugar substitute. The result is a fluffy and creamy salad that’s sweetened with fresh fruit!
Very Berry Cheesecake Salad
I used four different types of berries in this salad. You have full control over your salad, so you can use all four or only the ones you like the best.
And even though the fruit will naturally sweeten the salad, I still suggest using the Swerve Confectioner’s sugar substitute. As you mix it, the sweetener will fluff up the salad, giving it a texture that resembles whipped cream.
It also looks as good as it tastes, so serve it as a party. You could even serve the cheesecake salad inside individual ramekins or jars for each guest.
Best Keto Berries
Honestly, the berries I used in this salad are the best berries to eat on the keto diet. Strawberries, blueberries, blackberries, and raspberries are all high in fiber and low in carbs.
Out of them, blueberries have the most carbs.
Here are how many net carbs are in one cup of each of the berries, so you can adjust this recipe as you need:
- Strawberries – 8.7 grams
- Blueberries – 18 grams
- Blackberries – 6.1 grams
- Raspberries – 6.7 grams
What To Eat With Salad
There are 7 grams net carbs in each serving, so I suggest eating this with something that is really low in carbs. Either serve keto chicken and veggie kabobs with keto broccoli salad on the side.
It’s delicious and perfect for larger families. There are 2 grams net carbs in a serving of keto maple bacon bites or keto radish salsa.
You can also serve something low-carb by munching on some cheese and cured meat.
How To Store Cheesecake Salad
Store leftover cheesecake salad in an airtight container and keep it in the refrigerator for up to three days.
I don’t recommend freezing it. After it thaws, the texture will change and it won’t have that delicious whipped feeling to it. It’s best to eat this fresh.
