I’ve actually never attempted to make a pork loin until I got an Instant Pot. Well, I’ve tried once, but only to end up with a dry piece of pork. I never got it right. The Instant Pot makes the process of cooking the pork so much easier, and it’s perfectly juicy and tender every single time!

I’m a big believer in meal planning, and this low carb pork loin is a great idea to make ahead of time and eat throughout out the week. Frozen cauliflower rice is easy enough to make in batches and pack for the week to go along. I like to drizzle the pork loin and cauliflower rice with some soy sauce (coconut aminos if you’re gluten free), or even hot sauce. Top with veggies or add a side salad.
You can also cut up and utilize this low carb pork loin to make fried rice! To make this pork loin, all you’ll need is seven ingredients and your Instant Pot! That’s right, you can sauté the pork right in the pot, then secure the lid and cook for 30 minutes!

Ingredients:
1 3lb pork tenderloin
2 teaspoons dehydrated garlic
1 teaspoon onion powder
2 Tablespoons paprika
Salt and pepper, to taste
3 Tablespoons olive oil
1/2 cup apple cider vinegar
Directions:
Pat dry your pork loin then season with dehydrated garlic, onion powder, paprika, salt, and pepper.
Place oil in the Instant Pot and set to sauté.
Add the pork tenderloin when the oil is hot, then brown your pork on each side for about 3-4 minutes each before flipping.
Once the tenderloin is browned all over, turn off the saute mode and add 1/2 cup apple cider vinegar.
Secure the lid and cook on the “meat” setting for 30 minutes.

- Salt and pepper,

- 1/2 cup apple cider vinegar
