What Are Butter Cookies
They are also called Danish biscuits. Butter cookies simple crispy cookies with a smooth buttery taste. They originated in Denmark, but similar cookie recipes also started in France.
Recipes for butter cookies have been passed down from family to family. The beauty is in their simplicity and texture. They only have 4 ingredients and surprisingly melt in your mouth.
These cookies always show up on Christmas cookie platters or inside cookie tins as DIY gifts. Add them to your list and hand them out this Christmas.
Low-Carb Butter Cookies
Traditionally, butter cookies are not keto-friendly, but I made a few modifications so that you can enjoy a few cookies without going out of ketosis.
Instead of whole wheat flour, I used almond flour. In order to get the best texture, use Bob’s Red Mill almond flour. It has the finest texture. Do not use almond meal. It has bits of almond skin in it and will give the cookies a distracting grainy texture.
For the sweetener, I used powdered Swerve sugar. This adds a sweet taste and contributes to the “melt in your mouth” texture they have.
The other two ingredients – butter and vanilla – are keto-friendly and in the original recipe.
Easy Keto Butter Cookies
There are lots of different steps in this recipe that kiddos will have a blast doing! I also like to get a few friends together and bake a big batch of them together. They are so much fun to make!
Kids will love rolling the cookie dough into balls and putting them on the baking sheet. Then, they will also really enjoy pressing down on the cookies with a fork. It’s like playing with playdough!
The hardest part is waiting for them to cool down. It’s important that they cool down because they will be pretty soft when they come out of the oven, but they harden as they cool.
How To Store Butter Cookies
You can store these cookies at room temperature for up to a week (if you don’t eat them all first!). Place them in a cookie jar or similar container – just keep the air off of them so they don’t go stale.
These cookies also freeze really well too! They will stay fresh in the freezer for up to 6 months. To freeze the cookies, place them on a baking sheet in a single layer, then put the baking sheet in the freezer.
Once all the cookies are completely frozen, put them in a freezer-safe food storage bag and keep them in the freezer.
4-Ingredient Cookies Keto
Keto butter cookies taste the best when they are plain and fresh out of the oven. If you want to decorate the cookies, remember that simple is better.
Add a little dollop of sugar-free jam on top. Or, dip half the cookies into sugar-free white chocolate and add some sugar-free sprinkles.
You can also just dust them with some confectioner’s sugar substitute when they are hot out of the oven. It will look like snow-dusted cookies.

Instructions
1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
2. In a bowl, combine almond flour, powdered sugar, and vanilla and mix well.
3. With your hands, add the butter to the mixture and combine thoroughly.
4. Roll dough into 8 inch balls and place on cookie sheet at least 2 inches apart. The cookies will expand slightly when cooking.
5. With a fork, press down in both directions on cookies.
6. Cook for 8-12 minutes keeping a close eye on them.
7. Let cool for 10 minutes and enjoy!
