This recipe is so easy that even your kiddos can make them. All you do is mix the ingredients together, and then add them to a baking sheet and let them harden.
I like to speed up the process and place them in the freezer! I don’t know about you, but my kids want to eat them as soon as possible.
4-Ingredient No-Bake Keto Cookies
Yes, there really are just four simple ingredients in these cookies! If you have ever made no-bake cookies, then you already know how easy they are.
Here is a bit more information about the ingredients – all of the exact amounts are in the printable recipe card at the bottom of this post.
- For the peanut butter, choose creamy and natural peanut butter. If you are on the keto diet, you definitely want to use a sugar-free peanut butter.
- If you are allergic to peanut butter, use a sugar-free sunbutter (from sunflower seeds) or a different type of nut butter.
- Trust me, use coconut flour. Don’t use any other type of flour. Coconut flour soaks up the moisture from the peanut butter in the best way. Any other type of flour will leave the cookies too soft.
- I used two different types of sweeteners because it gives the cookies a deeper and more well-rounded flavor. Sugar-free maple syrup has a rich taste. The powdered sugar substitute enhances the cookie’s texture.
Easy Peanut Butter Cookies
There are lots of ways that you can customize these easy cookies. Melt some low-carb chocolate and drizzle it on top of the cookies. Or, after the cookies set up, dip them into the chocolate.
You can also place them in a baking dish and make some bars.
After you make the cookies, eat them just like they are or crumble and serve it over keto ice cream or a low-carb parfait.
Even though cookies are usually a dessert, these cookies can be enjoyed as a grab-and-go breakfast too! They are so high in protein that they are a fun thing to eat with a cup of coffee first thing in the morning.
How To Store No-Bake Peanut Butter Cookies
The best way to store no-bake peanut butter cookies is in a resealable plastic bag in the refrigerator. Keep the air off of them – if you don’t, they might become stale.
They will last up to a week in the refrigerator.
You can also store them in the freezer. Just keep them in a resealable freezer-safe bag. They will stay fresh in the freezer for up to 6 months.
When you want to eat them, just let them thaw overnight in the refrigerator.
