These are by far my favorite no-bake caramel cookies. The nuts add even more protein and a satisfying crunch too. Plus, the fat in the peanut butter will make you feel full. This helps you cut down on eating food just because you are bored.
Plus, whenever you eat high-protein food like these cookies, you will have more energy on busy days. If you are running out the door and need something you can keep in your bag, make some keto granola bars! They are high in fiber and protein.

Since this is a no-bake recipe, it’s perfect for warmer weather, when you really don’t want to use an oven.
Did you know that pecans have essential fatty acids that your body needs when it is in ketosis? If you don’t like pecans, swap them out for your favorite chopped nuts.
You can even use a different type of nut or seed butter. My favorite is natural almond butter or sunbutter.
If you aren’t a fan of caramel sauce, melt some sugar-free white or dark chocolate chips instead. Then, drizzle the melted chocolate on top of the cookies.

How To Make No-Bake Cookies
This recipe is so easy, that kids can help make them.
The process is the same as other no-bake cookies. Just mix the ingredients, form the cookies, and then chill them so they set up! Trust me and place parchment paper on the baking sheet first. This way, the cookies won’t stick to the baking sheet.
It took about 2 hours for the cookies to firm up in the freezer before I felt like they were ready – but you can certainly eat them at any point.

How To Store No-Bake Cookies
