My favorite thing about this chicken salad is the sugar-free dressing. I keep this dressing recipe on-hand and use it for tuna salad or egg salad too.
Here’s what I used to make my sweet and tangy dressing:
- Sugar-free mayo
- Powdered erythritol
- Apple cider vinegar
- Poppy seeds
- Salt
- Garlic powder
- Olive oil
Here’s what I put in my chicken salad:
- Chicken breast – Save time and use rotisserie chicken. You can also use canned chicken or leftover chicken thighs.
- Mixed salad greens – use your favorite lettuce
- Blue Cheese – if you don’t like blue cheese you can use feta cheese as a replacement
- Walnuts – these are optional. You can replace them with other nuts or leave nuts out entirely.
- Red Onion
- Avocados
- Fresh blueberries

Make this salad ahead of time and store it in the refrigerator. It will last about 3 days.
Then, you just have to grab it when you are hungry. This keto chicken salad is incredibly simple. To make it even easier, store it in separate plastic containers. Now, you just have to grab one and go – no thinking or dishing it out required.
How To Customize It
If you ever want to customize it, this salad is really easy to change. Use a different dressing – this one change will make it taste completely different.
Add some cubed extra-sharp cheddar for a surprising bite.
You can also throw in more diced fruit like strawberries or chopped apples.
Remember when you add more ingredients to recalculate your macros so you stay within your keto goals.
What To Serve With It
Honestly, this salad is so filling, I don’t need to eat very much with it. If you want to eat this as a light dinner, eat some keto cheesy garlic bread on the side. It will round out the meal and make it even more filling.
Keto Chicken Salad With Blueberries

Ingredients
For the dressing:
Sugar-free mayonnaise
Powdered erythritol
Apple cider vinegar
Poppy seeds
Salt
Garlic powder
Olive oil
Black pepper
For the salad:
Skinless chicken breast
Mixed salad greens
Blue cheese
Walnuts
Red onion
Avocados
Blueberries
Directions:
Whisk or shake together all ingredients for the sauce.
Place chicken in a gallon-sized freezer bag. Pour half of the sauce over the chicken, reserving the remaining sauce for the salad. Seal the bag and toss to coat. Allow it to marinate in the refrigerator for at least 2 hours to overnight.
Preheat a double burner grill over high heat. Reduce the heat to medium. Add the chicken breast and cook until done, about 6 minutes on each side. (Cooking time may vary depending on the thickness of the chicken breast. Check for an internal temperature of 160 degrees.)
Keep warm but allow the chicken to rest for 20 minutes before slicing.
Prepare salad with mixed greens, blue cheese, walnuts, red onion, avocados, blueberries, and chicken. Drizzle with remaining dressing and toss to coat.
