This bundt cake is perfect to share at parties. It’s lovely enough to be the centerpiece of the dessert table. Since it is naturally gluten-free, you can share it with anyone that can’t have gluten.
If you are short on time, make this ahead of time and store it in the refrigerator. It will stay fresh in the refrigerator for up to 5 days. Just make sure to keep it in an airtight container so it doesn’t dry out.
Keto Bundt Cake
A bundt cake is a stunning cake baked in a decorative fluted tube pan. It has a hollow middle – a lot like a cake-sized donut.
If you don’t have a bundt cake pan, you can bake this in a loaf pan, round cake pan, or even a square cake pan (I have this set). You can even make gingerbread cupcakes with this recipe.
The only thing that will change is the cooking time since a cupcake will bake faster than a bundt cake. You’ll know it is fully cooked when you insert a toothpick and it comes out clean.
No matter which cake pan you use, make sure you grease it with a keto-friendly baking spray. This cake likes to stick to the pan – even the nonstick pan.

You won’t believe it, but there really are just 3g net carbs in each slice of cake! It’s so liberating to be able to enjoy a slice of gingerbread cake guilt-free.
I included a recipe for sugar-free cream cheese frosting in the recipe card. I love this icing! You can use this on top of other low-carb cupcakes and cake recipes too. Then, dust it with some cinnamon.
For a little extra flair, sprinkle some sugar-free chocolate shavings on top. Another fun option is to skip the icing altogether and just dust the bundt cake with a confectioner’s sugar substitute. It looks like a snow-dusted cake this way.

For the cake:
Almond flour
Baking powder
Baking soda
Swerve confectioners sugar substitute
Eggs
Oil
Sour cream

Xanthan gum

For the icing:
Cream cheese
Swerve confectioners sugar substitute
Vanilla
Cinnamon
Heavy whipping cream
Instructions:
1. Preheat the oven to 350 degrees and grease the inside of a bundt pan well.
2. In a mixing bowl, blend together all of the ingredients for the cake until smooth and creamy.
3. Pour the batter into the bundt pan, and smooth out evenly.
4. Bake for 40-45 minutes until cooked through.
5. Let cool for 10 minutes, and then turn the cake out onto a plate or platter (this one is perfect for special occasions).
6. Cool the cake to room temperature.
7. Place the cream cheese, swerve sweetener, vanilla, and cinnamon for the icing into a mixing bowl and blend until creamy.
8. Add in the heavy whipping cream, and blend until smooth and fluffy.
9. Spread the icing over the cake and serve.

- 1 tsp Baking Powder
