This is a semi-homemade recipe. I used pre-made ket0-friendly ice cream and covered it in chocolate. The result is amazing and delicious! I can’t wait to share this recipe with you!

How To Make Ice Cream Bites
The basic idea behind this recipe is that you melt some chocolate and then roll balls of ice cream into it. There is a bit more to it than that – and I’ll share links to the products I used that made this even easier.
Silicone molds will work the best to make the ice cream bites. The ice cream doesn’t stick to it and will pop out easily. If you don’t have silicon molds, ice cube trays will also work.
You can even add popsicle sticks to the molds or ice cube trays so it’s easier for kids to make.

Since these ice cream bites are made so small and in individual molds, they are the perfect answer for portion control. There are 5g net carbs in each bite. That carb amount could change depending on which flavor of ice cream you make it with.

Keto Ice Cream Bites Recipe

Ingredients:
Keto Ice Cream
Sugar-Free Dark Chocolate
Coconut Oil
Instructions:
Once your ice cream has been allowed to sit and is very melted, scoop small spoonful’s of the ice cream into the mold, making sure it’s packed in there good.
Place the mold on a baking sheet and put into the freezer for about 1 hour so the ice cream bites form well and freeze back up.
In a microwave-safe bowl heat your chocolate chips and coconut oil in 30-second increments until chocolate is smooth.
Remove the molds from the freezer and cover the baking sheet with parchment paper or a baking mat.
You will want to work quickly on this step. Pop the ice cream bites out of the mold and quickly dip into the melted chocolate. I found using two forks worked best to toss them and ensure they were fully coated.
Lift out the bite from the chocolate and allow the excess to come off. Place on the baking tray. Repeat with remaining ice cream bites.
Once your bites have hardened back up they are ready to enjoy. They are best stored in an airtight container in the freezer.

- 2 tbsp Coconut Oil
