For a soft, uniform consistency and a dense, non-crumbly texture, which is exactly what is wanted in cookies or other baked goods, you want to buy blanched (skinned) almond flour.

What can I substitute for almond flour?

If you are allergic to almonds, no worries! Ground sunflower seed meal is a perfect allergy-friendly swap.

Besides, these sugar-free chocolate chips taste nearly just as good! My personal favorite are Lily’s chocolate chips and they’re available on Amazon, but other sugar-free alternatives can be found at your local store as well.

How to store chocolate chip cookies?

Chocolate chip cookies should be frozen for long-term storage. If you want to keep the cookies fresh for only about a week, the cookies can be stored in an airtight container. Plastic wrap should be used to separate cookies layered on top of each other. A crafty way to preserve the softness of your cookies is to put a slice of bread in the airtight container for the cookies to absorb its moisture.

Ingredients to make Low Carb Chocolate Chips Cookies

1 ½ cup finely ground almond flour
½ teaspoon baking powder
½ teaspoon xanthan gum
¼ teaspoon salt
1 egg, room temperature
½ cup granulated erythritol sweetener
⅓ cup fractionated coconut oil
1 teaspoon vanilla extract
½ cup sugar free or stevia sweetened dark chocolate chips

How To Make Low Carb Chocolate Chips Cookies

1. Preheat oven to 325 degrees. Prepare a baking sheet with parchment paper.


2. In a large bowl, whisk together the almond flour, baking powder, xanthan gum, and salt.
3. In a smaller bowl, whisk together the egg, erythritol, coconut oil, and vanilla extract until well blended.
4. Add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chocolate chips.


5. Divide the batter into 16 cookies using a large cookie or ice cream scoop.  Place on parchment paper and press slightly to create an even cookie.


6. Bake for 10 to 12 minutes or until the middle of the cookies are just set and the edges are beginning to brown.

7. Remove from oven and allow cookies to remain on the baking sheet from 10 minutes. Transfer to a wire cooling rack and continue to cool.
