If you have a saucepan, electric mixer, and an 8×8 baking pan, then you have everything you need.

Here are a few tips for you. First, make sure you leave the cream cheese out on the counter for about half an hour before you begin.
It needs to be soft so it’s easier to mix. Also, make sure you’re using almond flour, not almond meal. Almond meal will make the crust taste grainy.

You’ll be happy to know that you can enjoy these cheesecake bars all week long! Store the leftover cheesecake bars in an airtight container and keep it in the refrigerator for about a week.
You can freeze them, too. Store the raspberry swirl cheesecake bars in a freezer-safe food storage container and keep it in the freezer for up to six months.
Keto White Chocolate Raspberry Cheesecake Bars Recipe

INGREDIENTS:
Crust:
- Almond flour
- Coconut flour
- Powdered sugar substitute
- Butter – melted
Cheesecake Layer:
- Cream cheese – softened
- Heavy whipping cream
- Powdered sugar substitute
- Vanilla
White Chocolate and Raspberry Swirl:
- Sugar free white chocolate chips
- Frozen or fresh raspberries
- Water
- Powdered sugar substitute
INSTRUCTIONS:
In a large bowl, mix together all of the crust ingredients until crumbly.
Press the mixture into a parchment paper lined 8×8 baking pan. Set aside for now.
In a separate bowl, beat together the cheesecake layer ingredients until you have a smooth texture.
Spread the cheesecake mixture over the crust and place in your refrigerator.
In a saucepan, heat the frozen raspberries with 1 Tbsp water over low heat. As the raspberries warm, mash with a fork. Stir in 1 Tbsp powdered sugar substitute, remove from heat, and let cool completely.
In a microwave safe dish, melt the white chocolate chips. (I did 30 second intervals, until I could stir them together).
Spoon small mounds of the raspberries and melted white chocolate on top of the cheesecake layer. (I did not use all of the raspberry sauce).
Using a knife, swirl them all together.
Place the dish back into your refrigerator to set. (At least 1 hour).
When you are ready to serve, remove and slice into bars.
