They’re the perfect things to make as a Valentine’s Day dessert or an Easter treat. And one of the best parts about them is that you don’t have to be an experienced chef to make them.

There are three simple parts to the cheesecake bars – the crust, cheesecake, and raspberry swirl. And you don’t need any fancy kitchen gadgets either.

If you have a saucepan, electric mixer, and an 8×8 baking pan, then you have everything you need.

This recipe makes it fun to give into your sweet tooth. It’s not so rich that it hurts your stomach.

It doesn’t have any of those odd aftertaste that some sugar-free recipes have. Everything about these raspberry swirl cheesecake bars tastes familiar and delicious. 

I was able to make it taste so good because every single step is homemade. I didn’t use any premade ingredients or take any shortcuts.

Trust me, all this work is worth it! But it might shock you to learn that even though you’re making the crust and filling by hand, the bars will still be ready to eat in less than 45 minutes.

One of the secrets to making the cheesecake bars taste so sweet without being too rich, is to use keto white chocolate chips. In fact, this is what helps give the cheesecake bars the iconic swirls of white and red.

You can melt a keto-friendly white chocolate bar if you can’t find white chocolate chips. But I seriously recommend that you find some – because you don’t want to leave it out.

Whether you’re looking for something sweet that isn’t too rich, or you need a recipe for a party so that you can eat it on a keto diet, this is the perfect dessert. And since the crust is made with both almond and coconut flour, it’s naturally gluten-free, too.

Here are a few tips for you. First, make sure you leave the cream cheese out on the counter for about half an hour before you begin.

It needs to be soft so it’s easier to mix. Also, make sure you’re using almond flour, not almond meal. Almond meal will make the crust taste grainy. 

How To Store Cheesecake Bars 

You’ll be happy to know that you can enjoy these cheesecake bars all week long! Store the leftover cheesecake bars in an airtight container and keep it in the refrigerator for about a week.

You can freeze them, too. Store the raspberry swirl cheesecake bars in a freezer-safe food storage container and keep it in the freezer for up to six months.

Keto White Chocolate Raspberry Cheesecake Bars Ingredients

INGREDIENTS:

Crust:

  • Almond flour
  • Coconut flour
  • Powdered sugar substitute
  • Butter – melted

Cheesecake Layer:

  • Cream cheese – softened
  • Heavy whipping cream
  • Powdered sugar substitute
  • Vanilla

White Chocolate and Raspberry Swirl:

  • Sugar free white chocolate chips
  • Frozen or fresh raspberries
  • Water
  • Powdered sugar substitute

INSTRUCTIONS:

Mixing crust ingredients

In a large bowl, mix together all of the crust ingredients until crumbly.

Making the crust

Press the mixture into a parchment paper lined 8×8 baking pan. Set aside for now.

Whipping up the cheesecake mixture

In a separate bowl, beat together the cheesecake layer ingredients until you have a smooth texture.

Spreading the cheesecake layer on top of the crust

Spread the cheesecake mixture over the crust and place in your refrigerator.

The raspberry puree

In a saucepan, heat the frozen raspberries with 1 Tbsp water over low heat. As the raspberries warm, mash with a fork. Stir in 1 Tbsp powdered sugar substitute, remove from heat, and let cool completely.

In a microwave safe dish, melt the white chocolate chips. (I did 30 second intervals, until I could stir them together).

Adding the raspberry and white chocolate swirls
Spoon small mounds of the raspberries and melted white chocolate on top of the cheesecake layer. (I did not use all of the raspberry sauce).

Using a knife, swirl them all together.

Place the dish back into your refrigerator to set. (At least 1 hour).

When you are ready to serve, remove and slice into bars.
