Back in 2005 after my last baby, I was about 220 pounds and it took me a year and a half of counting steps, cutting out carbs and running on a treadmill to lose 100 pounds and I made vow to never ever put that weight back on . Last time, I couldn’t exactly blame it all on the belly because i started out a bit heavy and I wasn’t making much of an effort afterwards either. It was a combo of having 4 kids all about 2-3 years apart and being in complete denial of how badly i let myself go. This time around I am really paying attention to what I eat, when I eat it, and exercising (was exercising because I’m now on bed rest).
For this pregnancy I’m eating lots if fish, veggies and keeping snacking to a minimum but i’ve still gained a lot more than i wanted to and my lack of any red meat has contributed to a very low iron count. I was put on iron pills and told to eat iron rich foods and now i’m desperately searching for different recipes to try and find ways to incorporate them into my meals. Below is my a meal my husband made and some recipes that I want to try.
I’ve never loved red meat but when my husband mentioned making me bistec empanizado (breaded steak) I caved . I hate cooking so I thank god for a husband who’s a cook. 🙂 Along with the steak he made rice, beans and some longaniza. The empanadas were bought at a little columbian place in Tampa.
This wIld Mushroom, flank steak and poblano tacos looks yummy and easy enough for me to make.
Spinach & Chick Peas will make a nice side dish to any meal.
I love waffles and these protein waffles look SO yummy!
I hope getting my iron levels under control are easy as these recipes look. 🙂
