I can’t believe Lauren is almost 9 months. It feels like just yesterday I was pregnant! When I first found out I was pregnant with Lauren I was obviously thrilled, but it was definitely unexpected. Turkey Bacon Egg Casserole
Ingredients:
6 English muffins
6 eggs
1/2 cup of spinach **you can use frozen spinach.
1/2 pound of chopped turkey bacon
1/2 cup of diced red bell pepper
Instructions:
Cook turkey bacon and place on a paper towel-lined plate to drain grease. Chop turkey bacon.
Saute red bell pepper and spinach in the same skillet for about 5-10 minutes over medium-high heat until soft.
Toast your English muffins as you normally would and then place it in an oven-safe bowl. Top with diced red peppers, turkey bacon, and spinach.
Beat eggs and add salt pepper and pour over English muffins.
Bake for 35-40 minutes at 350 degrees on bottom tray. Remove from oven when egg mixture is firm.
Top with cheddar cheese and place casserole back in oven until cheese is melted.
Turkey Bacon Egg Casserole
Serve on it’s own or with hot sauce for a spicy kick!
Even now after I had Lauren I still try my best to eat well and take my vitamins so that I can have the energy I need to get it all done!
