Growing up, I remember that before the school year started, my mom would start waking us up early a few weeks before summer ended and she would always say the same thing every morning: “levantarse ya que se acabadon las vacacione”. Then she would swing the door open and scream “que vaga”. I don’t focus too much on waking them up earlier because Joseph and Olivia do a really good job of waking everyone up at the crack of dawn.

I’m putting all my energy into making sure our house is stocked with their favorite foods from Walmart and coming up with our weekly meal plan. It’s nothing complicated for us because we’re a busy household, so we stock up on stuff like Pace Salsa that adds a kick of flavor to our Taco Tuesdays (see below for my easy to make taco lasagna recipe).
For the other days, we have meals such as the delicious homemade tasting Prego Italian pasta sauce for Pasta Mondays, Chicken Noodle Soup for our traditional Soup Sundays, and V8 +Energy for me and my hubby.
The official back to school countdown has begun! Planning dinner in advance gives us something to look forward to and helps me know what to buy ahead of time.
This taco lasagna is pretty easy since I’m using precooked lasagna noodles. It’s a delicious twist on a classic lasagna and your favorite kind of taco! Check it out below!

Lasagna noodles
Ground beef.
Taco seasoning
Egg
Ricotta cheese
Mixed cheese.
Mild Pace salsa
Diced tomatoes
Sour cream
Green onions
Instructions:
Start by preheating oven to 350 degrees. Brown beef until no longer pink, drain and mix in taco seasoning and set aside.
In a bowl, add eggs and ricotta cheese then stir.
Grab a baking dish and lay out lasagna noodles (we use five noodles for a large lasagna).
Add a layer of ricotta mixture, beef , 1/3 of the salsa and top it off with cheese. **I didn’t add specific measurement for the beef and ricotta mixture on purpose. Some people like to add more beef and less ricotta, or vice versa. You can’t go wrong so layer the amount you prefer!
Repeat all the steps two more times and then bake covered for 40 minutes.
Let taco lasagna cool down before cutting.
Top with a dollop of sour cream, chopped green onions, and diced tomatoes.

- 5 cups shredded Mexican style cheese
- 24 ounces mild Pace salsa
- diced tomatoes
- green onions
- sour cream
- 1 package of lasagna noodles

worked great with corn tortillas and I’m going to try flour ones next time. Fritos sprinkled on top added a special treat for the kids, they think those are god food. K-12 does not teach much anymore.
