Keto Broccoli Fried Rice
Cauliflower rice has been a main staple in my low carb diet from day one! I literally serve it for lunch, dinner and sometimes even breakfast! I find it much easier to stick to a meal plan when I eat the same thing during the day. Below is what I typically eat.
Breakfast:
Two or three hard-boiled eggs
Black coffee
Lunch:
Arugula and spinach salad with blue cheese and chicken. For the dressing, I use 2 tablespoons of red wine vinegar (any vinegar will work) and 1 tablespoon of olive oil.
Dinner
Varies but its usually some sort of veggie rice, a protein (a store-bought rotisserie is my go-to on busy nights), and a cabbage and romaine salad with the same dressing I mentioned above.
I don’t snack too often but when I do I have a handful of almonds, or in a pinch, I grab some pork grinds.

The only time I do switch up and eat something different is for dinner. A new current keto recipe favorite is this Keto broccoli fried rice! If you enjoy cauliflower rice as much as I do, then you’ll love this broccoli fried rice! Its a delicious and affordable alternative to take out and is really easy to make!
What I love about this particular Keto fried rice recipe is that you can make a big batch of broccoli rice and use leftovers to make the fried rice! You can make it with eggs as I did or add chicken (I use a pre-made rotisserie) or you can even add shrimp!

Keto Broccoli Fried Rice
Prep Time: 5 minutes
Cook Time: 8-15 minutes
Serves: 6
Ingredients:
4 c Riced broccoli
1 tbsp Sesame oil
3-4 tbsp Low sodium soy sauce or coconut aminos
½ Onion chopped
2 Large eggs
Sesame seeds and chopped green onions for garnish
Instructions:
Heat 1 tbsp of sesame oil in a skillet over medium-high heat.
Add in the chopped onion, and cook for 2-3 minutes until it begins to soften.
Pour the riced broccoli into the skillet, and stir to combine. Cook the riced broccoli for 4-6 minutes, or until it reaches the desired level of doneness. This is purely personal preference. If you prefer your riced broccoli to have more bite, cook it for less time.
When the riced broccoli is just about done cooking, add in 3-4 tbsp of soy sauce, and stir to combine.
Push the broccoli off to one side of the skillet, and crack two large eggs into the pan. Stir them around to scramble them, and mix them into the broccoli fried rice as they finish cooking.
Garnish with freshly chopped green onions and sesame seeds if desired.
