Keto Cabbage Beef Casserole
My favorite thing about casseroles is how the entire dinner is made in one dish. This one is almost that easy too. It uses two dishes – the skillet and the casserole dish. But that sure saves me a lot of time during cleanup. Another Keto recipe I’m looking forward to making for dinner is this delicious and easy to make Keto Pork Tenderloin!
Eating Keto makes me feel so healthy and so much more energetic. Sometimes I do have a hard time finding a recipe that doesn’t leave my family feeling like the carbs are missing.
This is that recipe.
The cheese, bacon, cabbage, beef, and spices all combine and you don’t even know there aren’t any noodles or potatoes.
Ingredients
This is what you’ll need to make the Keto cabbage beef casserole:
- Ground Beef
- Medium cabbage shredded
- Butter unsalted
- Bacon
- Basil
- Thyme
- Oregano
- Rosemary
- Shredded cheddar cheese
- Salt and pepper to taste
- Freshly chopped parsley
Instructions:
Preheat the oven to 425 degrees.
Cook the bacon until crispy in a skillet over medium-high heat. Remove the bacon from the skillet, crumble it, and reserve 1 tbsp of the bacon grease in the skillet.
Add 2 tbsp of butter to the bacon grease in the skillet, and add the crumbled bacon back in.
Place the shredded cabbage in the skillet, and stir to coat it in the butter and bacon grease.
Pour the cabbage mixture into the bottom of a greased casserole dish.
In the same skillet, add the ground beef, and cook until completely browned over medium-high heat.
Mix in the oregano, thyme, rosemary and basil, as well as salt and pepper to taste.
Layer the cooked beef over the top of the cabbage in the casserole dish.
Top the mixture with 2 cups of shredded cheddar cheese.
Bake the casserole for 15-20 minutes until the cheese is browned and bubbly on top.
Sprinkle with freshly chopped parsley and serve.
Can you freeze this Keto casserole?
Yes, this casserole freezes really well. Go through all the steps of the recipe and stop right before you put it in the oven. Instead of putting it in the oven, place the casserole dish – covered with foil or a lid – in the freezer.
Put the date on the top so you remember when you froze it. This casserole will last about 3 months in the freezer.
When you are ready to bake it, take it out of the freezer and bake it for 45 minutes, or until it is brown and bubbly.
How to Make A Keto Casserole Your Family Will Eat
The secret is cheese and bacon! When you cover the cabbage and beef with cheese and bacon, it makes it irresistible. They will eat it up!
Another secret to making Keto meals your family will enjoy is to spice everything up. Use fresh herbs. They have a brighter and fuller flavor. If your meal is light on taste, they will beg for the mac and cheese. This casserole uses my favorite spices – basil, thyme, oregano, parsley, and rosemary. I use the combination of spices in homemade marinara sauce and meatballs.
