You are going to bake the cookie in the skillet, so you need something that is oven-safe.
I prefer to use cast-iron skillets because they add the best flavor to my foods and they basically last forever.
There are other oven-safe skillets out there. An ovenproof skillet will have an oven-safe symbol or text on the bottom. If your pan has plastic on the handles, it’s best to not use it in the oven.

- Almond flour
- Shredded coconut or you can also use more almond flour
- Baking soda
- Salt
- Butter
- Granulated Swerve Sweetener
- Egg
- Vanilla extract
- Sugar-free chocolate chips
Instructions
Preheat the oven to 325 degrees and lightly grease a 10 inch oven proof skillet.
In a medium mixing bowl add the almond flour, coconut, salt, and baking soda and stir together.
In a large mixing bowl, beat butter until creamy. Add in sweetener, egg, and vanilla extract. Once mixed, add in almond flour mixture until well combined.
Stir in chocolate chips
Spread dough in skillet and bake for 25 minutes, until light golden brown. The cookie will be very soft when removed from the oven (it won’t seem cooked through- but it is)
Allow to cool at least 15 minutes before serving. Cookie will continue to firm up as it cools so if cutting to serve in pieces allow it to cool completely.
