I know the feeling all too well. I’m doing so well at sticking to my low-carb diet. Then, I just start craving brownies! Those chocolate morsels tempt me. When that happens, this recipe never fails!

Easy Low-Carb Brownies
I made mine in a mini muffin tin. When you make them that small, you can keep them on hand for easy snacking!
If you have ever made brownies or cookies before, you can make these. There are just a handful of easy ingredients and a few steps. In fact, they are so easy to make that your kids can make them with you!
How To Make Sugar-Free Chocolate Muffins
Here’s what I put in my sugar-free chocolate muffins. If you enjoy keto baking, then you probably already have most of these ingredients in your pantry already.
- Eggs
- Swerve Granular Sweetener – You can also use Monk fruit sweetener or Erythritol
- Butter – Use real butter, not margarine
- Vanilla Extract
- Almond Flour – Use blanched almond flour, not almond meal. Almond meal will make it taste grainy.
- Cocoa Powder
- Baking Powder
- Chopped Walnut – The nuts are optional but give it a hearty crunch
How To Customize Your Muffins
There are lots of ways you can take this base recipe and make it completely your own. Here are a few ways to change things up.
- Top with coconut flakes
- Make a keto buttercream frosting for on top
- Add chopped strawberries to the mix
- Mix-in sugar-free chocolate chips
- Top with almond butter
- Sprinkle with Swerve Confectioner’s Sugar
- Sprinkle with cinnamon
Kid-Friendly Almond-Flour Brownie Muffins
You might want to make a double batch. These are some of my family’s favorite low-carb snacks for kids. You might think you are making them just for you, but once your kids taste them, they will want them too!
More than just snacks, they are a protein-packed addition to a kid’s lunch. You can pack them in your kid’s lunchbox or just keep a bunch for them to eat as an after-school snack.
Smart Keto Snacking
Another tip – you might want to make these in batches and keep them on-hand at almost all times. They are the perfect keto snack.
I love the size! They are small enough that I can just portion out two or three at a time. It really helps me with my self-control.
How To Store Them
Keep them in an airtight container on your countertop or in the pantry. Store them at room temperature where they won’t dry out.
They will stay fresh for about 3-5 days.
Another option is to freeze the muffins. If you do this, freeze them in a single layer on a baking sheet first, then put them all in a zippered freezer bag after they are completely frozen.
When you want to reheat the frozen muffins, put them on a baking sheet and warm them up in the oven at 300 degrees F for about 15 minutes.
