As you know, bread just won’t work on a low-carb diet. I set out to create a stuffing recipe that has the same taste and texture as the stuffing we all love, and I perfected it.

Easy Sausage Stuffing
This recipe is perfect for any holiday meal. It pairs well with turkey on Thanksgiving or Ham on Christmas.
Another thing I love about it is that it makes great leftovers. It’s savory and crunchy and will last up to a week in the refrigerator.
This recipe can also be made into a casserole and just eaten as the main course. It’s so versatile that it is sure to become one of your new favorite recipes.
What’s In Keto Sausage Stuffing
Here is what I used in my recipe, along with any substitutions or ingredient replacements you can use.
- Almond Flour – Use almond flour not almond meal. Almond meal will make the stuffing taste grainy.
- Egg – If you are allergic to eggs, use egg replacement.
- Butter – Unsalted butter will be best in this recipe.
- Baking Powder
- Breakfast Sausage – Any type of sausage will taste amazing here. For low-carb eating, avoid anything with maple syrup in it.
- Onion – Any type of onions works perfectly in this recipe.
- Celery – This veggie adds a flavor depth and texture, but if you don’t like celery you can leave it out. Replace it with chopped carrots. Carrots have more carbs, so take that into account if you are tracking your macros.
- Poultry Seasoning – Swap 1 tablespoon of poultry seasoning for 2 teaspoons of sage and 1 teaspoon of either thyme or marjoram or make your own with this recipe.
- Celery Salt
- Sage
- Chicken Broth – Any kind of chicken broth, stock, or bone broth will give this recipe the flavor it needs.
Holiday Meal Prep Ideas
To save yourself time in the kitchen, do as much meal prep ahead of time as possible. Here are my favorite meal prep tips for this recipe!
- Use frozen diced onion
- Bake the biscuits ahead of time or buy keto-friendly biscuits that are already made
- Make the sausage ahead of time and store in the refrigerator until you are ready to make the stuffing.
- Cut the celery ahead of time and store it in the refrigerator until you are ready to use it.
If you do these time-saving tips, all you will have to do is mix everything together and then bake it for about 30 minutes.

Ingredients:
For the biscuits:
- Almond flour
- Eggs
- Butter
- Baking powder
- Salt
For the stuffing:
- Ground breakfast sausage
- Onion chopped
- Celery chopped
- Poultry seasoning
- Celery
- Sage
- Pepper
- Chicken broth
Instructions:
Preheat the oven to 350 degrees.
Mix together the ingredients for the biscuits. Form the dough into 5 evenly sized balls and flatten slightly with your hand. Bake for 15 minutes until cooked through. Let cool slightly.
Switch the oven to broil on high.
Break the cooled biscuits into small pieces and broil until browned and a bit crispy.
While the biscuits are cooking and browning, brown the breakfast sausage and drain any extra grease away.
Melt the 4 tablespoons of butter in a skillet over medium heat on the stove.
Add the onions and celery into the skillet with the butter, and slowly cook them until they are beginning to become tender.
Pour the vegetable mixture over the combined bread crumbs and sausage in a mixing bowl.
Switch the oven back to 350 degrees.
Add the poultry seasoning, celery salt and pepper to taste to the mixing bowl, and toss to combine completely.
Pour in the broth a little at a time, mixing with your hands until the mixture is wet and clumps just a bit, but is not soggy. There should not be a lot of extra liquid in the bowl.
Spread the mixture into a well greased 9×9 baking dish, and bake for 25-30 minutes.
