Serve Mexican pinwheels at your next party. Spicy shredded chicken, cream cheese, all rolled in a low-carb tortilla. It’s a popular party food that everyone loves.
Mexican Pinwheels
There are just six easy ingredients in these zesty chicken taco pinwheels. This recipe makes four servings, and each serving only has 5 grams net carbs.
So, be careful with how many you eat. They taste so good that it’s way too easy to eat too many of them.
That’s why I like to make them for my lunch. These chicken pinwheels are super filling and delicious.
My kids loved these pinwheels because I didn’t make them too spicy. If you want to add more heat to yours, I suggest adding your favorite hot sauce or even a few jalapeno slices.
And if you have enough carbs in your macros, dip the pinwheels into some keto-friendly guacamole or salsa!
Keto Pinwheels
What is the best size of tortilla to use when you make low-carb pinwheels? You can use any size you want.
You’ll just have to adjust how much filling you add. I think it’s easier to roll up the pinwheels when you use a larger tortilla but smaller ones will make a quick lunch – so use any size that you like.
What is your favorite brand of keto-friendly tortillas? I love Mission brand.
They taste just like flour tortillas, but have very few carbs in them. Always read the ingredients and the nutrition label before buying low-carb tortillas.
Don’t trust the marking claims on the front. Some “low-carb” tortillas are still made with unhealthy ingredients.
Mexican Chicken Pinwheels
It only takes 15 minutes to make Mexican chicken pinwheels. The secret to making them so quickly is to have cooked chicken breasts waiting in the refrigerator.
They should be pre-shredded so that all you have to do is mix the chicken with the rest of the filling ingredients. But you can also use canned chicken, too!
In fact, canned chicken is a cheaper alternative and it tastes just as good.
For the best flavors, I suggest using leftover keto cilantro lime chicken thighs or keto mayo roasted chicken. Both recipes will taste amazing with the rest of the ingredients in the pinwheels.
Want to change things up even more? Make them with ground beef instead of chicken.
If your pinwheels keep coming unraveled when you try to slice them, chill them in the fridge a little bit longer. Chilling the pinwheels is the secret to keeping them rolled up.
As they sit in the fridge, the cream cheese mixture will solidify, making them less likely to unwrap.
Keto Mexican Food
These pinwheels are bursting with authentic Mexican flavors. If you’re going to eat them for lunch, I suggest serving them with some Keto Mexican Street Cauliflower on the side or eat the pinwheels as a side dish with Keto Turkey Mexican Skillet as the entree.
If you’re going to serve the Mexican pinwheels at a party, then serve them with some more keto-friendly finger foods. Keto Empanada Roll Ups are delicious, Keto Crunchy Dorito Beef Burritos taste just like the chips, and Keto Taco Seasoned Chicken & Jalapeno Roll Ups are bursting with flavors.
And my favorites are Keto Crunchwraps because they are fantastically crispy.
How To Store Pinwheels
Since these are made with cream cheese, you need to keep them refrigerated. Store the leftover Mexican pinwheels in an airtight container and keep them in the refrigerator for up to three days.
They don’t need to be reheated. So, just keep them in the fridge and eat them whenever you get the craving. They are a fantastic lunch idea.
