These cookies are an easy keto holiday treat. The holidays are such a difficult time to be on a low-carb diet. There are cookies and pies everywhere! When I have a craving for something like that, this is the first recipe I go for. These cookies will satiate you and keep you feeling full until your next meal. In fact, they are so filling that you won’t be tempted to overeat them too.
Best No Bake Keto Cookies
I personally enjoy white chocolate more than any other kind. If you like dark chocolate, you can melt some sugar-free dark chocolate chips instead. One thing you should remember about melting the chocolate chips. If you use the microwave, be very careful and stir the chips frequently.
Microwaves are notorious for burning chocolate chips. Melt them at 20-30 second intervals, stirring them well in between each time.
Another fun way to add some festive touches to these little cookies is by topping them with crushed sugar-free peppermints. Imagine how that would look and taste. Yum!

One word of warning: these are so delicious your kids will want to eat them too. You might want to double the recipe. Of course, if you want to make sure that you get some, you can also set them out for Santa Clause. Just an idea.

There are only 2 grams of net carbs in each cookie. Feel free to eat a few of them in one sitting. Most of the health benefits of these cookies come from the pecans and sunflower seeds. This gives them lots of healthy fats and protein. It also increases the fiber content of the cookies (which brings down the net carbs).
If you are allergic to peanuts, you can use any low carb nut butter of your choice. One of the best kinds for this recipe is sunflower butter. You are already using sunflower seeds, so the flavor combination is perfect.
How To Store Keto Cookies With Peanut Butter
You need to store these cookies somewhere they will avoid heat. If you are going to be doing a lot of baking or cooking, then your kitchen might get warm, so you don’t want the cookies to melt on your countertop.
I prefer to store the cookies in an airtight container in the refrigerator. While they are shelf-stable, keeping in the refrigerator keeps the texture perfect.
They will last about a week in the refrigerator.
You can also freeze these no-bake cookies. Flash freeze them first so they don’t all freeze into one big lump. That means you should place them on a cookie sheet in one layer and then place the cookie sheet in the freezer until they are frozen solid. After they are frozen you can place them in a sealable plastic bag. These cookies will last 3-4 months in the freezer.

Instructions:
In a mixing bowl, combine the peanut butter, sweetener and vanilla extract. Stir to combine.
Add the pecans and sunflower seeds to the bowl, and mix until well incorporated.
Place the white chocolate chips and the coconut oil into a microwave safe bowl, and heat at 30 second intervals until the mixture is completely melted and combined.
Put a small amount of the melted white chocolate into the bottom of each section of a well greased mini muffin tray.
Place a dollop of the peanut butter cookie mixture into each section of the mini muffin tin, leaving a bit of room at the top of each section.
Fill each section to the top with more of the white chocolate.
Place the tray into the freezer to set for an hour before serving.
