If you are looking for a family-friendly low-carb dinner idea, then you found it! These bowls are packed with tons of whole foods that are incredibly good for you. Even if you have family members that don’t want to eat keto, they will gobble this up. Everyone loves fajitas, right?
If you have family members that aren’t eating low-carb (like your kiddos) then they can pile the ingredients onto some heated tortillas. Believe me, they’ll love the cilantro lime cauliflower rice though. It has the best flavor and reminds me of Chipotle!

Low-Carb Meal Prep Ideas
When I meal prep, I am more likely to stay on track with my keto diet. It’s so much easier to stick to the plan when I look in the refrigerator and I have lunch, ready to go!
The best way to make this meal-prep ready is to put the chicken and veggies in plastic containers with lids. Then, keep the cauliflower rice in other containers. This will keep everything fresh and tasty!
Keto-Friendly Fajita Seasoning
The recipe calls for a couple of tablespoons of taco seasoning. Not all taco seasoning sold in the store is keto-friendly, so read your labels.
If you want to make your own, here’s my favorite recipe:
- 1 tablespoon cumin
- 1 1/2 teaspoons chili powder
- 1 1/2 teaspoon sage
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon basil
- 1/2 teaspoon chipotle chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
Ninja Foodi Chicken Fajita Recipe
I made this recipe in my Ninja Foodi. This thing is amazing! I make so many things in it! If you don’t have one, get one. Believe me, it cuts cooking times down drastically (which is a huge help with lots of little ones).
If you don’t have a Ninja Foodi, you can use an Instant Pot too. Get one or the other, they are both amazing products.
Low-Carb Cilantro Lime Cauliflower Rice
My love of Chipotle is so adamant in part because I’m a huge fan of their cilantro lime rice. That’s why I made a keto version of it – and it tastes just as wonderful!
If you don’t like cilantro, you can omit it.
Low-Carb Fajita Bowl Recipe Meat Ideas
Another amazing thing about this recipe is that you can use any type of meat that you have on hand. It’s super versatile like that.
I used chicken, but you can interchangeably use beef or pork. I suggest using steak instead of ground beef, it will look so much better.
How to Store It
I recommend storing the meat and veggies in their own containers and seal them with a lid. Then, store the cauliflower rice in its own container too.
It will stay fresh for about 5 days in the refrigerator.
This is a freezer-friendly meal too! Store the meat and veggies in one freezer bag and the rice in another one. Seal them tightly. They will stay fresh in the freezer for up to 3 months.
When you are ready to eat them, let them thaw and then warm them up in a skillet over medium heat until they are hot!
Low-Carb Fajita Bowl Recipe

Ingredients
Skinless chicken breasts
Taco seasoning
Chicken broth
Bell pepper
Green bell pepper
Sweet onion
Olive oil
Salt and pepper
For Cilantro Lime Cauliflower Rice:
Cauliflower, riced *Can also use frozen cauliflower
Lime
Fresh cilantro
Olive oil
Additional options for Fajita Bowls:
Cherry or grape tomatoes
Lime slices
Sour cream
Shredded cheese
Guacamole
Diced avocado
Roasted pepitas
Directions
Coat chicken breasts on all sides with taco seasoning.
Set the cooker to “saute.” When the liner is hot, add 1 tablespoon olive oil and place the chicken in the pot. Brown on both sides, about 3 minutes each. Chicken will not be cooked through.
Remove chicken from the pot but keep warm. Add the chicken broth and scrape the bottom with a flat, wooden spoon to remove cooked on pieces. Replace chicken in the pot.
Seal the pressure cooker lid and set the valve to sealing. Program the pressure cooker on “manual” or “pressure cook” for 8 minutes. After the depressurizing cycle is complete, allow a 5 minute natural release before switching the valve to venting for a quick pressure release.
Remove and cut the chicken into bite-size pieces or shred.
With a Ninja Foodi, return the chicken to the pot. Toss the bell pepper and onion in the remaining olive oil. Salt and pepper as desired. Place the bell pepper and onion strips over the chicken. Set the broil setting to 5 minutes. Cover with the air fry lid and cook until the vegetables are crisp-tender.
With an Instant Pot or other electric pressure cooker, remove the liquid from the pot. Turn on the “saute” function until hot. Add the remaining olive oil. Add the bell pepper and onion strips and saute until crisp-tender.
For the Cilantro Lime Cauliflower Rice, heat a skillet over medium-high heat. Add the olive oil and cauliflower. Cook, stirring as needed to avoid burning, until the cauliflower is tender but not mushy. Stir in the lime juice and cilantro. Add salt and pepper if desired.

- 1 lime, juiced
- 1/4 cup finely chopped fresh cilantro
