Easy Summer Salad Meals
Salads make the best kind of meal in the summertime. No hot stoves, no hot ovens. Just light and cold meal that is both refreshing and filling. This is one of my favorites – my other favorite is my creamy keto cucumber and radish salad. I love how crunchy raw radishes are.
Plus, in the summer you have access to all those fresh veggies from the farmer’s markets. This is a fantastic way to eat more veggies and enjoy doing it.
Low-Carb Avocado Ranch Dressing
My favorite thing about this recipe is the avocado ranch dressing. It tastes just like regular ranch dressing but is even creamier thanks to the avocado.
It also has mayo, dill, lemon juice, and lots of amazing herbs and spices. In fact, I like to make a bunch of extra dressing and use it as a dip for my raw veggies.
Shrimp With Avocado Ranch Dressing
You don’t have to use shrimp, there are lots of ways that you can customize this recipe in lots of ways. Replace the shrimp with tofu, sauteed mushrooms, chicken or even some salmon.
If you don’t like ranch dressing, you can also just add a simple low-carb vinaigrette salad dressing to the salad too.
I like to add toppings to my salads. The best toppings for this salad is either feta, goat cheese, parmesan cheese, or jalapeno crisps.
What Goes with Shrimp and Spinach
This is an entire meal in a salad, but it can also work as a side dish for a larger meal. Serve it with keto garlic butter zucchini and sausage. It has lots of the same spices and will feed a crowd.
If you are going to eat this for lunch, make some keto creamed spinach with bacon. It is incredibly rich and filling.
How To Store Avocado Ranch
When you make avocado ranch dressing, store it in an airtight container and keep it in the refrigerator. It will stay fresh for up to 2 weeks. The lemon juice in the dressing will keep the avocado from turning brown.
If you notice it separating, just give it a nice shake. I like to store it in a mason jar because it has a lid that screws on nicely and tight.

INGREDIENTS:
Salad
- Fresh Baby Spinach
- Avocado
- Colossal Shrimp
- Grape Tomatoes
- Red Onion
- Old Bay Seasoning
- Olive Oil
- Bacon
Avocado Ranch Dressing
- Avocado
- Mayo
- Lemon
- Dried Dill
- Minced Garlic
- Fresh Parsley
- Water
INSTRUCTIONS:
To create the Avocado Ranch Dressing, simply combine all the ingredients in a blender or food processor.
Blend until you have a creamy texture. **If you would like a thinner consistency, feel free to blend in 1-2 Tbsp of water.
Set aside for now.
Coat the shrimp with old bay seasoning, set aside.
In a large skillet, begin to heat olive oil over medium high heat.
Add shrimp and cook for 2-3 minutes on each side. Remove from heat.
Place the spinach in a large bowl. Top with tomatoes, red onion, ½ of the cooked shrimp and ½ of the avocado slices.
Drizzle with desired amount of the Avocado Ranch Dressing (I used about ⅓ cup). Toss well.
Top with remaining shrimp and avocado slices. Along with crumbled bacon and fresh parsley.

- 1 Avocado
- 12 ounces Colossal Shrimp Peeled, Deveined, Tail-On
- 1/4 cup Grape Tomatoes Cut In Half
- 1/4 cup Red Onion Chopped
