Have you cooked with palmini noodles before? If not, now is the perfect time to try it! These are a perfect low-carb alternative to traditional pasta. Instead of wheat or rice flour, they are made out of Hearts of Palm.
The way this company processes the Hearts of Palm, you hardly notice a difference between them and traditional noodles.
They come in different shapes too. For this recipe, I used flat lasagna noodles.
Hearts of Palm are extremely nutrient-dense. They are really high in fiber, protein, and even vitamin C and B6. These noodles will make you feel full and since they have so much fiber, they will help regulate your blood sugar too.
This recipe has all the flavors and texture of lasagna, but it’s also very much a soup. This means it is so much easier to cook too! It only took me about 15 minutes of prep time in total. The rest of the time I just it set on the stove and cook.

Ingredients:
Ground beef
Medium onion
Can palmini lasagna noodles
Kale
Minced garlic
Tomato paste
Low carb marinara sauce
Chicken broth
Italian seasoning
Parmesan cheese
Heavy whipping cream
Salt and pepper
Instructions:
Place the ground beef and onion in a saucepan over medium high heat on the stove. Saute until the meat is browned and the onions have softened. Drain any excess fat.
Reduce the heat to medium low and add the tomato paste and minced garlic. Saute for a minute longer.
Pour in the marinara sauce, chicken broth and Italian seasoning, as well as salt and pepper to taste. Stir to combine.
Add in the palmini noodles and the kale. Stir the kale into the mixture well.
Place a lid on the saucepan, and simmer for 20 minutes.
Remove the lid, add the heavy whipping cream and parmesan cheese.
Stir to combine, and simmer another 5 minutes before serving.

- 3 cups Kale chopped
- 2 tsp Garlic minced
- 1 tbsp Tomato Poaste
- 1 cup Marinara Sauce Low-Carb
- 3 cups Chicken Broth
- 1 tsp Italian Seasoning
- 1/4 cup Parmesan Cheese
- 1/2 cup Heavy Whipping Cream
