Ingredients:
Butter unsalted
Sliced mushrooms
Fresh spinach
Palmini linguini noodles
Beef broth
Heavy whipping cream
Italian seasoning
Chopped green onions
Tomato paste
Salt and pepper
Instructions:
1. Melt the butter in a deep sided skillet over medium high heat on the stove.
2. Add the mushrooms and palmini noodles to the skillet with the butter, and saute until the mushrooms are tender.
3. Mix the spinach into the skillet until wilted. Set the mixture aside.
4. Reduce the heat to medium.
5. Add the beef broth, heavy whipping cream, Italian seasoning, chopped green onions, tomato paste and salt and pepper to taste to the skillet. Whisk to combine.
6. Cook the sauce down until it has thickened to your liking.
7. Add the noodle mixture back to the skillet, and toss to coat in the sauce.
8. Serve garnished with freshly chopped parsley if desired.
