Here’s what I put in my chicken soup:
- Oil – Olive oil or avocado oil work best
- Onion – Any type of onion works, yellow or red. Save time and use frozen chopped onion.
- Carrots – These are optional. Peel and slice them or buy matchstick carrots
- Celery
- Garlic
- Thyme
- Cauliflower Rice – Save time with frozen cauliflower rice
- Chicken Broth – Use low-sodium broth if you can.
- Chicken Breasts – Use canned chicken or rotisserie chicken to save time.

This soup is perfect for cooler weather. It warms you up inside. It’s also packed with nutrients that restore your body’s vitamins and minerals.
The celery and carrots have heart-healthy fiber and lots of vitamins A and C.
I love cauliflower rice because it’s an excellent source of folate and vitamin K. It also has a compound in it called choline – a nutrient that is crucial for your heart, liver, and your brain.

Anyone can make this soup, it’s as easy as mixing all the ingredients together and letting it simmer until the flavors all meld together. This easy stovetop recipe is the perfect way to teach kids how to cook.
There are lots of shortcuts you can take that won’t affect the nutrition or flavor of the soup. To save time, buy these pre-made ingredients:
- Frozen chopped onions
- Jarred chopped garlic cloves
- Frozen cauliflower rice
- Canned Chicken or Rotisserie chicken
- Matchstick carrots
How To Store Chicken Soup
If you have any leftover, save it! It tastes even better heated up the next day. All you have to do is keep it in a container with a lid and store it in the refrigerator. It will last about 3 days in the refrigerator.
Low Carb Chicken Cauliflower Rice Soup

Olive oil
Onion
Carrots *optional
Celery
Garlic
Dried thyme
Salt and pepper
Cauliflower rice
Low sodium chicken broth
Skinless chicken breasts
Parsley
Directions:
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook until vegetables soften.
Add thyme, garlic, salt, pepper, chicken broth, and chicken.
Bring to a boil and then reduce heat and simmer for 5-7 minutes or until chicken is fully cooked.
Remove chicken and shred with two forks.
Add chicken and stir in cauliflower rice to the pot.
Simmer uncovered for 5-8 minutes, stirring occasionally, until cauliflower rice has softened.
Season with salt and pepper to taste and top with parsley.
