Every time fall rolls around, I look forward to all of the seasonal flavors! Since I’m on the keto diet, there are not very many apple recipes I can enjoy.
Pumpkin, on the other hand, is delightfully low in carbs! That’s why I love creating so many recipes with it. You see, if I can’t have apple butter, I will for sure be enjoying some pumpkin butter.
This recipe could not be any easier. After you make it once, you’ll probably have the recipe memorized! In fact, it’s so easy to make that you can let your kids help you in the kitchen too.
Simple Pumpkin Butter Recipe
There are just a few simple ingredients in this homemade pumpkin butter recipe. I used pumpkin pie spice as well as some additional cinnamon.
Taste it after you make it and add more cinnamon if you want it to have a spicier taste. I like it milder and I think this has a perfect balance.
When it comes to sugar-free sweeteners, I prefer Swerve brown sugar substitute. It crystallizes as it cooks and creates the best texture in the butter. You can also use your favorite sugar-free sweetener too. Just don’t use a powdered or granular one – that won’t dissolve as well.
How To Make Pumpkin Butter
There are just two simple steps in this recipe. Mix everything together and then simmer it until it thickens up.
You make the pumpkin butter, simmer it over medium-low or even low heat. Do not heat it up too hot or too fast. If you do, it might burn. Cook it low and slow and the spices will infuse into the pumpkin puree. You’ll smell it as it cooks – it makes your kitchen smell like fall!
Pumpkin Butter Uses
There are lots of different ways you can use this pumpkin butter. It’s a spread just like apple butter. Make some low-carb bread and spread this on top for a quick breakfast treat.
You can also use this as a topping on a quick keto mug cake. It’s also the perfect thing to add on top of your favorite chaffle!
This is so tasty, that you’ll want to just enjoy a spoonful of it as a little snack. Do it! It’s that delicious!
How Long Pumpkin Butter Lasts
I like to store it in a mason jar because the lid screws on tightly and keeps the air out. Store it in the refrigerator and it will stay fresh for about a week.
Crockpot Pumpkin Butter
If you don’t want to nurse it over the stove, you can also make this pumpkin butter in your slow cooker.
Just cook it on low – it will cook way too fast on high. Keep an eye on it and stir it every hour or so.
