Keto Mug Pancake Almond Flour
I just love making dessert recipes in a mug. I loved my keto mug cheesecake so much that I decided I wanted to try and make a really easy pancake in a mug recipe. This turned out so perfectly!
One very important tip: Please use almond flour, not almond meal. If you use almond meal, the pancake will taste grainy. This is because almond meal has bits of the almond skin ground up in it. Almond flour does not. It’s ground finer and will give you a better result.
Keto Pancake For One
Keep in mind that all the ingredient amounts are for just one pancake in a mug. I tried to keep it simple that you know how much of each ingredient to use in every coffee cup.
This recipe really is so simple that kids can make it. It’s also so easy that you can make this on those busy mornings when you just don’t have time to make something complicated.
1 Minute Keto Pancake
When I say it takes one minute, I’m not exaggerating! Talk about simple! You just mix all the ingredients in the coffee cup, and then cook it in the microwave.
One of my favorite things is that this is a super-portable breakfast recipe. After it cooks in the microwave, you can grab a spoon and take it on the go. If you take it on the go, I suggest leaving the sugar-free syrup off. I can just imagine that not ending well!
Quick Keto Breakfast Ideas
It’s really easy to get into a rut when it comes to breakfast – an egg rut. Thankfully, there are tons of creative and fun things you can still eat on a low-carb diet!
If you like waffles, then try my keto blueberry chaffles. They are super simple and taste like a blueberry muffin. Another favorite is keto churro chaffles – seriously tastes like dessert but is keto-friendly.
Are you preparing for a brunch? Then make keto coffee cake or some cute keto sausage egg and cheese roll-ups. They are super-easy too and are really high in protein and low in carbs.
How To Make Pancakes In A Mug
This mug cake is pretty basic, so feel free to add your favorite low-carb toppings. For example, sprinkle some sugar-free chocolate chips on top. Or, sprinkle with unsweetened toasted coconut flakes. You could also add a few slices of strawberries or blueberries. Yum!
