French toast tastes best when you make it fresh. If you want to save some for later, you can put it into a small container with a lid. It’ll stay fresh in the fridge for about 2-3 days.
When you are ready to eat it, just put it in the microwave again for about a minute. If it’s too dry, just add a little bit of almond milk.

What’s in 90-Second Keto French Toast
Here’s what I used in my keto French toast. As you can see, this comes out more like a low-carb mug cake than actual French toast. It still tastes amazing and gives you a boost of protein at the start of the day!
- Butter – Use salted butter since this recipe doesn’t call for any extra salt.
- Almond Flour – Always use almond flour, not almond meal. Almond meal isn’t ground as well so it will give your french toast a grainy texture.
- Baking Powder
- Egg
- Heavy Cream – half and half can work in a pinch!
- Vanilla Extract
- Cinnamon
- Sugar-Free Syrup – this is the topping of your French toast. Use any sugar-free syrup that you want.
Other Mix-In Ideas
I loved how mine tasted just like the base recipe with only sugar-free syrup on top. If you want to change things up, here are some more low-carb mix-in ideas. Keep in mind that whatever you add to the recipe will affect the net carb amounts.

Baking powder
Heavy cream
1 egg
Vanilla extract
Cinnamon

Directions:
Place first four ingredients into a microwave safe mug.
Microwave for 90 seconds, remove bread from mug and slice into rounds.
In a medium bowl whisk together cream, egg, cinnamon and vanilla.
Dip each slice of bread into the egg mixture and cook in a frying pan on medium until browned on both sides. Top with butter and sugar-free syrup.
