I never gave up snacking. I’m a busy mom, when I snack, I am fueling my body with the energy that I need as I chase my kids and do all my errands.

Keto Chicken Enchilada Roll Ups

The important thing is to always make smart snack choices. Sugery foods might give me a burst of energy, but it will be followed by a sugar crash that will leave me hungry – all without giving my body any nutrients. 

These enchilada roll ups have protein that will provide a steady amount of energy without spikes and crashes. Plus, I’m a sucker for Mexican food and these hit the spot! 

Enchilada Appetizer 

Did you know that red enchilada sauce is usually pretty keto-friendly? There are only 3g net carbs in 1/4 cup. Everything else in this recipe is simple and has no extra carbs or sugar.

Keto Chicken Enchilada Roll Ups

In fact, the cheddar cheese, cream cheese, and chicken breasts are all fantastic sources of protein. 

When you make these cute roll ups, you will be rolling the shredded chicken and cream cheese mixture up inside crispy cheddar cheese circles. It looks super fancy!

This is the perfect recipe to serve at a party. I like to make them and eat them as a snack when I am craving something salty or savory. If you want to serve them with your dinner, add a chopped salad. It will be a really filling meal. 

Keto Chicken Enchilada Ideas 

These little roll ups have all the classic flavors that you love! The red enchilada sauce is mild and yet has the perfect amount of spice. If you like the feeling of biting into crispy deep-fried foods, then you will love these.

The baked cheese has the same crispy exterior, but without the grease. 

Make plenty of them if you have kids. They are small enough for little hands to pick up and they will love eating their bite-sized enchiladas. 
 

Keto Enchiladas With Cheese Shells

It is possible to make them for meal prep, but the longer the roll ups sit in the refrigerator, the softer the cheese wraps will become.

They will soak up the moisture from the sauce and the cream cheese will harden too. Basically, they taste the best when they are fresh out of the oven.

If you want to save yourself prep time, combine the chicken mixture and store it in an airtight container in the refrigerator for up to 3 days. Then, make the cheese crisps fresh and roll them around the chicken mixture and drizzle it with enchilada sauce last.

There are lots of ways that you can be creative with them and make them taste how you want them to. Here are a few of my favorite ideas: 
  • Dip them into sour cream
  • Add diced jalapenos
  • Sprinkle cilantro on top
  • Mix diced red onions into the chicken filling

You can also use ground beef, or shredded pork for the roll ups too.

On the side, serve them with some cauliflower Mexican rice. Yum!

Keto Chicken Enchilada Roll Ups

Prep Time: 15 minutes
Cook Time: 10 minutes
Servings: 8
Net Carbs: 3 net carbs per serving

Ingredients:

Shredded cheddar cheese
Shredded chicken breasts
Chopped green onions
Cream cheese softened
Red enchilada sauce
Salt and pepper to taste
Sour cream for garnish

Instructions:

1. Preheat the oven to 350 degrees. 


2. Arrange the cheese in 8 evenly sized circles on a large parchment lined baking sheet. Make sure to leave some space between each cheese circle so that it can expand while cooking. 


3. Bake for 10 minutes until the cheese takes on a lace-like appearance. Remove, and let cool for a minute or so. 


4. While the cheese is baking, combine the chicken, cream cheese, enchilada sauce, green onions and salt and pepper to taste in a mixing bowl. 


5. Place a layer of the chicken filling down the center of each baked cheese circle. 


6. Gently and quickly fold the cheese circles up around the filling to form cheese enchiladas. 


7. Drizzle additional enchilada sauce on top of desired and serve garnished with sour cream.

  • 1/3 cup Green Onions chopped
  • 4 ounces Cream Cheese softened
  • 1/4 cup Red Enchilada Sauce
