This keto ice cream couldn’t be any easier to make. After simmering and reducing the heavy whipping cream, butter, and sweetener mixture, just put it in a container and let it cool completely. Then, mix in the vanilla and cocoa powder. Now you are ready to freeze it!

Freeze the no-churn ice cream in an airtight freezer-safe container. It will last about a month in the freezer (if you don’t eat it before then!).
Keto Chocolate Ice Cream Recipe
Here’s the ingredients you’ll need to make keto chocolate ice cream. The exact measurements can be found within the printable recipe card below.
Ingredients
Heavy whipping cream
Butter
Granular sweetener (Swerve)
Unsweetened cocoa powder
Vanilla extract
*Optional: ½ cup shavings from a stevia sweetened or unsweetened chocolate bar
Directions
Add 2 cups heavy whipping cream, granular sweetener, and butter to a medium saucepan.
Simmer over medium heat, stirring until sweetener completely dissolves.
Bring mixture to a boil, then lower the heat and simmer for 30 minutes until reduced to about half, stirring occasionally.
Pour into a heat-proof storage container and allow to cool to room temperature.
Once cooled, add cocoa powder and vanilla and mix. *Here is where you would add the optional chocolate shavings.
In a mixing bowl, add the remaining 2 cups of heavy whipping cream and whip to stiff peaks.
Gently fold cocoa mixture into the whipped cream.
Freeze for 3-4 hours and allow to sit at room temperature for 15-30 minutes to thaw slightly.
Serve and enjoy!
