My kids love the fresh, crispy chicken covered in melted cheese. I love setting this chicken aside and using it in my other meal-prep recipes in the week.

How To Use Leftover Rotisserie Chicken
When I know I have a really busy day ahead of me, I like to grab a rotisserie chicken from the store and make this recipe. Then, all you have to do is shred the chicken, cover it in cheese, and heat it up until the cheese melts.
Then, pour some warm marinara sauce on top. It is incredibly simple!
Easy Way To Make Chicken Parmesan
This recipe is a quick and easy way to enjoy chicken parmesan. This was one of my favorite recipes to eat when I was a kid! Before I went on the keto diet, I always ordered it from Italian restaurants.
Now that I am eating l0w-carb, I knew I had to make my own keto-friendly version, and here it is!
If you want to add some heat, sprinkle in some red pepper flakes. For a bit more crunch, you can even add some diced green bell pepper too.
Meal Prep Casserole
This is the perfect thing to make for your meal prep. To keep the chicken crispy, I suggest storing the marinara sauce in a separate container from the chicken. Keep both of them in separate air-tight containers in the refrigerator for up to 3 days.
In fact, you can reuse the chicken in your favorite chicken salad or in a low-carb lettuce wrap.
How To Store Chicken Casserole
This is a fantastic way to use leftover chicken! If you have any casserole leftover, store it in an airtight container in the refrigerator for up to 3 days.
Keep in mind that if you store the marinara sauce on top of the chicken, it will make the chicken softer because it will soak up the sauce.
What To Serve With A Chicken Parmesan Casserole
This tastes really good with some roasted broccoli and cauliflower on the side. Since this is an Italian recipe, make some low-carb garlic knots and serve it with a chopped salad.
I also like to make some cheesy keto garlic bread on the side too.

Marinara sauce
Parmesan cheese
Shredded mozzarella cheese
Almond flour
Instructions:
1. Preheat the oven to 350 degrees. Prepare a (9×13) casserole dish with nonstick cooking spray.
2. In a large bowl, combine chicken, half of the marinara, 1 cup parmesan, and 1 cup mozzarella cheese (or 2 cups Italian cheese blend.) Transfer to the casserole dish.
3. Pour the remaining marinara over the top of the casserole.
4. Add the remaining mozzarella in a layer over the marinara and then top with the almond flour.
5. Bake for 30 minutes or until the cheese is melted and bubbling.
