- 1 lb. Boneless skinless chicken breasts cut into bite-sized pieces
- 12 oz. Natural smoked sausage sliced (watch the carb counts on the sausage you
- choose)
- 1 tsp. Cajun seasoning divided
- 1 tsp. Garlic powder divided
- 1 tsp. Onion powder divided
- 2 Tbsp. Olive oil divided
- 2 Small yellow squash cut into bite-sized pieces
- 2 Small zucchini cut into bite-sized pieces
- 1 Medium red bell pepper cut into bite-sized pieces
- Salt and pepper to taste
Instructions:
Making this Keto dish is quick and easy!
First start by adding olive oil to your skillet (on medium heat).
Next, you’ll place the chicken pieces into the skillet, and season with salt and pepper to taste.
Now sprinkle 1/2 teaspoon of cajun seasoning, garlic powder, and onion powder onto the chicken in the skillet, and saute until browned on all sides and cooked through.
Add the remaining tablespoon of olive oil to the skillet, and place the veggies in it over medium-high heat.
Take the other 1/2 teaspoon of cajun seasoning, garlic powder, and onion powder and sprinkle it over the vegetable, and saute until tender.
Mix the sliced sausages into the skillet, and cook for an additional 2-3 minutes until hot.
Add the chicken back to the skillet, and stir to mix well.
Serve with parsley flakes for garnish oil desired.
This skillet dish is tasty enough to eat on its own but it also tastes great with cauliflower rice or zoodles! You can also serve this recipe on a lettuce wrap for a light lunch!
